Maple curry steak bowl!
• UMAMI-Crave the Fifth curried maple sauce that I picked up in Kelowna, BC a couple weeks ago
• chopped dried rainier Chukar Cherries
• charred diced Washington apples
• charred diced Mama Bird Farm yellow heirloom tomatoes I picked up at the San Juan Island Farmers Market
• charred sliced red onion
• broiled Oregon Country Beef flank steak
• steamed white rice

This sweet and savory dish turned out really good and I would totally make it again! I plated it in a recycled deli box and brought my meal down to marina for a picnic dinner!

I had some boneless pork loin to use up so diced the pork into small pieces and seasoned it with Thai Mojito seasoning from and then added some sriracha mayo and mixed it up in a warm pan before scooping it inside some Twin Dragon gyoza wrappers and then adding a couple pieces of crispy garlic in each one. Then I sealed them up by adding a little water to the edge of the wrapper and sautéed/steamed them in a pan that had a small layer of a 50/50 oil and water mixture…this allows the bottoms to get crispy and the tops to get chewy from the steam. About 6-7 minutes in the pan did the trick! I let them cool down on some paper towels and then served them with a sriracha mayo drizzle and a sprinkle of Thai Mojito seasoning on the top! These turned out super good!!

I feel like a walk down the international aisle at your local grocery store can be both fun and intimidating. It’s one of my favorite aisles in the store and I try to take my time to check out as many items as I can. I made this budget meal tonight that packed a flavorful punch and was delicious! It was almost a one pan meal and it was only about 20 minutes to make. This was 3 thinly sliced pork loin chops (the three extra I had leftover from my family pack I wrapped up and put in the freezer for later), two bags of some Success Rice boil in the bag jasmine rice (a standard pantry item of mine), and a jar of Maya Kaimal Foods coconut korma sauce. That’s the kicker. Asian sauces usually have so much depth of flavor and can be expensive and time consuming to make from scratch. So why not cheat a little bit?! I need to make meals like this more often. It’s fun to change things up and try new things!

On a cold Colorado night, sometimes you just need some homemade shepherds pie! I seasoned my homemade mashed potatoes with ‘s Fishy Fishy seasoning (don’t let the name fool you - it’s a quite versatile “herb-y” seasoning) and seasoned my meat & veggie mixture with some of his Tiki Tiki (a seasoning with a hint of heat) and Rub-A-Dub (a great all purpose seasoning). I added a few .cheese Colby cheese crumbles from the cheese I got at my stay at a Kansas pecan farm!

I finally cracked open my can of bacon Spam this morning! I toasted one side of two pieces of plain white bread by spreading a little mayonnaise on one side of the bread and toasted in a frying pan on low-medium heat until one side was crispy and golden brown and the other side stayed soft and white. I sliced the spam and pan fried on medium heat until the pieces got crispy and then stacked them onto bread that had a little more mayo on it! Have you ever had Spam before?

This is a spicy salmon patty from Whole Foods Market that I pan fried with some Dutch peanut oil I had in my pantry and griddled a hamburger bun and added topped with some spinach, tomato, and a homemade spicy dijionaise!
