Nothing is better than a nice, sweet, frozen treat when it is HOT outside.
I whipped up this fast and easy Strawberry Banana Nice Cream with four ingredients already in my freezer and pantry.
And the best part - no ice cream maker is required. Instead, a high-speed blender like a Vitamix, Ninja, or Blendtec blender makes it easy-peasy.
Strawberry Banana Nice Cream
1 cup coconut milk (in the can) - any non-dairy milk will work
1/4 tsp vanilla bean paste or vanilla extract
2 medium bananas (peeled, frozen, and 1-inch slices)
1.5 lbs of frozen strawberries
Optional: natural sweetener of choice - honey, maple syrup, soaked dates, and monk fruit are all good
Shake the can of coconut milk before opening it.
Add the ingredients to the blender in the order listed above. I use a Vitamix.
Turn it on low and gradually increase the speed to high, using the tamper to push the fruit to the bottom.
You know it is finished when the sound of the motor changes and four mounds form on top. I usually have to blend for only one or two minutes.
Don't over-blend.
This is best served right away. Or, transfer to a glass bowl and place in the freezer for up to four hours. If you leave it to freeze for more than four hours, it will be rock hard - place it on the counter for five or so minutes to soften before scooping.
