Healthy food for one - vegetarian breakfast stuffed bell peppers🥚🫑

1. Preheat oven to 350
2. Cut peppers in half, salt and pepper. Bake for 15-20 minutes.
3. Dress pepper with half of the ingredients - pictured is cheddar cheese, mushrooms, chives, asparagus, garlic, and parsley. (Add bacon for meat option)
4. Add the egg, preferably farm-fresh. Top with remaining half of toppings.
5. Bake for an additional 20 minutes.
