Strawberries!
A delicious early summer fruit, strawberries are sought after for their red color, lovely heart shape and bright flavor. Strawberries are unique in that the seeds, called achenes, are on the surface on the skin, and not inside the fruit. The fruit does not continue to ripen when picked, so make sure to harvest when fully ripe. Strawberry plants are a perennial vine. They are easy to grow and can be found around the globe from sub-arctic Fineland to trpoical Equador. Europe has its own native strawberry species, commonly called wild strawberries or fraise de bois which is translated to "woodland strawberry." This specis is much smaller than those commonly found commercially in the US and have an intense flavor and aroma. Humans have loved strawberies for centuries. The sweet fruit can be found in Roman literature and has been ciltivated since the 15th century.
When picking or purchasing strawberries, look for berries with good color, intact green leafy hulls and avoid ones with soft or brown spots. Although very large strawberries may look attractive, they often have hollow centers and little flavor or juice.

Rhubarb
Although technically a perennial vegetable, rhubarb is mainly thought of as a fruit. The edible leaf stalk of Rhubarb, or Rheum rhabarbarum, is well known in the west, while the rhubarb root is used in traditional Chinese medicine in the east. Rhubarb stalks became popular in England and Europe in the 19th century as one of the first fruit like produce items of spring. Rhubarb is also used in Iran and Afghanistan as a vegetable in stews with spinach, as well as in Poland with potatoes.

Rhubarb is is mainly sold as whole stalks with the leaves removed as they contain toxic levels of oxalic acid. Young rhubarb stalks don’t need to be peeled and they freeze well for future use.

The pigment of rhubarb stalks can vary from red to green depending on the variety and the methods used to grow. The stalks are also extremely acidic, which required large amounts of sugars or sweeteners to achieve the classic sweet and sour taste we have come to know and love. Rhubarb is mainly used in pies, cobblers, tarts, preserves, jams and for stewing.

For this recipe, we chose bell peppers, red onion and grape tomatoes for our skewers, but we encourage you to be creative! Add variety with ingredients such as zucchini, mushrooms or artichoke hearts!

Peaches
Peaches are a type of stone fruit. Both peaches and nectarines are part of the Prunus Persica species. Peaches begin to ripen at the stem end and along the groove. Common varieties will continue to ripen after harvested, however, the sweetness may not increase after being picked.
The wonderful aromatic flavor of peaches is attributed to compounds called lactones, which is the same compound that is responsible for the aroma of coconut!
Peaches can be used in a variety of ways: jams, chutneys, canned, eating out of hand, preserves, savory relishes (mainly in Asian and Indian dishes), in tarts or pastries.
The United States is the worlds largest producer of peaches, with the majority of them grown in California. Peak season is July and August - so keep an eye out at your local farmers market!
Look for fruit free or blemishes or wrinkled skin. Green flesh indicates the fruit was harvested to soon. Mealy flesh is typically caused by storing the peach below 45° which impairs the pectin breakdown.

What Is Meal Prepping

Let's start at the beginning. Meal Prepping can be summed up as the creation of clean, healthy food that is cooled and portioned to be consumed at a later date in the near future. There are many reasons why people choose to meal prep.

Life can be crazy! Work. Family. Activities. Home. Commitments. Meetings. There are many obligations and stresses in our lives. With so much noise, it is easy to inadvertently to skip on a few tasks that seem daunting or unpleasant. For many, cooking and eating healthy & clean can fall into that category.

Health. Portion control can be a helpful tool to achieve your weight and health goals. Meal Prep is great for portion control! The pre-portioned meals takes the guess work out of portion control! Don't forget the benefits of a healthy meal that is ready when you are. Having a healthy option that is ready to eat has shown to drastically reduce snacking, or the impulse take our or delivery option. Consult your doctor or physician before starting a new dietary plan.

Budget. There are many reasons why people decide to start meal prepping. For some, a budget can be a reason. Planning meals and snacks for your self and/or your family ahead of time can be very beneficial in sticking with a budget by decreasing impulse purchases.
