High-Protein Peppermint Cheesecake with Oreo Crust
Ingredients:
Jello-O Peppermint Cheesecake Kit (available at Walmart or Amazon)
2 tbsp butter, melted
1 packet Oreo crust mix (from the kit)
1 large tub (40 oz) plain Greek yogurt (I used the Sam’s Club brand)
5 scoops vanilla protein powder (about 1/3 cup per scoop, adjust as needed)
1 tsp vanilla extract
Water (optional, to thin mixture if needed)
Crushed candy canes (from the kit)
Instructions:
Make the Crust: Melt 2 tablespoons of butter in a bowl.
Mix in the Oreo crust packet (labeled in the kit, either Packet 1 or 2). Set aside.
Prepare the Cheesecake Filling: In a large bowl, combine the Greek yogurt with the pudding mix from the kit. Add vanilla extract and protein powder. Mix until smooth. If the mixture is too thick, add a small amount of water to reach your desired consistency.
Assemble: Add a layer of Oreo crust to the bottom of a small bowl or ramekin. Scoop the peppermint cheesecake mixture on top. Sprinkle with the crushed candy canes included in the kit.
