June 21 is international yoga day. Honor international yoga day by following this simple meditation. Sit on a comfortable seat and close your eyes. Calm your mind and notice the quality of your breathing. Take slow and steady breaths and silence your mind for atleast 6 breaths. Do however long you want. See how you feel refreshed and at ease. This meditation has helped me personally to find a clear path when I’m confused. You don’t have to know yoga to follow this simple meditation. And remember yoga is not about getting upside down, it’s the journey that matters- Namaste

Egg Fried Rice
Ingredients
Cooked rice-2 cups
Eggs-4
Green onions-4 stems (chop the onion part and leaf separately)
Sweet onions-1/2 medium finely chopped (optional)
Ginger-1/2 inch piece
Garlic minced-3 pods
Carrots and Green peas-1/2 cup
Soy sauce-2 tbsp (use low sodium if you prefer)
Any Hot sauce or Chili oil-2 tbsp
Tomato ketchup or sauce-1 tbsp
Salt- per your taste
Oil-1 tbsp

Salad
Kale or Spinach or Spring mix-4 cups chopped
Sweet potatoes-3 medium cubed
Red onions-1/2 medium chopped
Cherry tomatoes- About 25 cut into halves
Chickpeas-1 cup cooked
Cucumbers-1 medium peeled and cubed
Olive oil-1/2 tsp
Salt and pepper- As required
Lime juice-1/4 cup

Creamy Cashew Dressing
Cashew nut-1/3 cup (boiled in 1 cup water for 20 minutes)
Almond milk-1/4 cup
Lime juice-1/3 cup
Cilantro-1/4 cup chopped
Garlic-2 pods
Salt-1/4 tsp
Pepper-1/2 tsp

Recipe
1. Preheat oven to 375 F. Mix cubed sweet potatoes,Oil, salt and pepper. Line a parchment paper and lay the sweet potatoes. Bake for 40 mins.
2. Chop the greens you are using. If using Kale, chop it, mix it with lemon juice and let it sit for 30 minutes. This makes the Kale taste really good.
3. Boil the cashews for 20 minutes. Drain the cashews and grind all the ingredients under dressing. If you prefer less creamy dressing, add more lime juice.
4. Once the potatoes are cooked, mix other ingredients under salad recipe.
5. Serve it with dressing on the side or mix the dressing right before serving.

Gluten Free All Purpose Flour-1 3/4 cup
Tapioca Starch-1/4 cup
Baking Powder-1 1/2 teaspoon
Salt-1 teaspoon
Butter-4 1/2 tablespoons
Water-3/4 cup
Dried Thyme- 1/4 teaspoon
Mix all the dry ingredients together in a bowl. Add butter to dry ingredients and break it using fork. Make a well in the center of dry ingredients and add water. Mix it using a wooden spoon. Knead it with hand to make a big ball of dough. Let it sit for 30 minutes. Then make 10 small balls out of the dough. Using a rolling pin, roll out the dough on flour dusted surface until it becomes about 1/8 inch thick. Cut into 8-inch circle using a lid or giant cookie cutter. Take the rest of the dough and mix it with the rest of the dough.
Heat a pan over medium heat. Place the tortillas one at a time on the pan and let it cook for 30-45 seconds each side.

Chickpeas cooked - 2 cups
Beets - 3 medium (peeled and boiled)
Cilantro- 1/4 cup
Serrano peppers - 2
Garlic - 5 pods (minced)
Parsley - 1/4 cup
Salt - 1 1/2 tsp
Ground pepper - 1 tsp
Gluten free bread crumbs - 1/4 cup
Flour - 1/4 cup

Preheat oven to 350 F. Add everything except Bread crumbs and Flour in a food processor. Blend it just until all the ingredients bind. Should take about 30 seconds to 1 minute. You can also smash everything using a hand smasher. Add Flour and Bread crumbs to the mixture.Line a cookie tray with parchment paper and grease it with olive oil.Grease your palms and make small rounds approximately 1 tbsp of mixture each. Line them on the cookie tray and bake each side for 20 minutes. Beet falafel is ready.
