Taaza Table Welcome to Taaza Table. My name is Nita & I am passionate about whole grain, plant-based, vegan recipes made from only the freshest organic ingredients.

I am a huge foodie and passionate about creating vegetarian recipes that are healthy, dairy-free, gluten-free, organic, and tasty. Food has changed my life and has dramatically improved my health – the goal of Taaza table is to share the transformative power of plant-based, dairy-free, gluten-free food with you. While I have always loved delicious food, my culinary passion grew dramatically after moving to the United States in 2003. Having an Asian-Indian background, I started with a foundation in vegetarian cooking utilizing lentils, aromatic spices, and a variety of vegetables. Once I moved to this country and found myself exposed to new and exciting cuisines, restaurants, and chefs, I started developing my palate and experimenting with new recipes in my own kitchen. However, after giving birth to my boys, I started experiencing debilitating pain and stiffness in my joints. Facing the prospect of regular medication and a lower quality of life, my passion for food waned and despair started to set in. Fortunately, after countless hours of research as well as trial and error, I discovered that food held the key to my healing. Armed with a newfound mission, I dove back into cooking and eliminated dairy and wheat from my diet while finding new and healthy ingredients to include in my food. As a result, my life has been transformed – my health has returned and I am feeling better than ever. The power of food! While the majority of the recipes you will find on Taaza Table reflect my personal diet of vegan and gluten-free cooking, you will also find some recipes that are only vegan and not gluten-free. I have included these options since some of my family members are not gluten-free. Finding both vegan and gluten-free recipes that taste good is a tall order. My goal is to share the recipes and experiences I have learned on my journey, so others do not have to search as I did. Fall season is usually our favorite time of the year. I am so excited to share this light and fluffy vegan whip cream that I created over the weekend! Thanks to my awesome KitchenAid mixer that made the process easy and super delicious! Using just 3 ingredients: coconut cream, maple syrup and vanilla essence! It was so rich and light at the same time. Fresh whip cream is one of the few things our family misses by being a vegan and this berrylicious parfait was a wonderful way to sample the yummy whip cream!🍨

Who doesn’t love paratha’s a quintessential in every North-Indian household right? Only difference is, this time made with a superfood called Moringa aka drum stick leaves!

Moringa is a native plant to the Indian region and used in Ayurveda because of so many medicinal properties it offers from immunity boosting to detoxifying properties that help in treating cardiovascular diseases, diabetes and skin related issues.

If you have tried incorporating this superfood in your diet, you are definitely missing something 🤩The process of making the parantha’s are so rewarding to see in the shots!! Fresh, vibrant green Moringa leaves gets tossed with whole wheat and chickpea flour, ginger, green chili, coriander seeds, turmeric, cilantro and salt. These soft and delicious flatbreads have become a new favorite in our house over the weekends. Try dipping them in mint raita or simply enjoy them with a dollop of vegan butter!

My kids are counting days until Christmas and can’t wait to open their presents that seems to appear on their own under the beautiful Christmas tree decorated with glass ornaments, ribbons and holiday lights.

What I love about the festive celebrations this month is spending quality time with the family, watching holiday movies bundled up with cozy blankets, and sipping hot Chocolate by the fireplace.

Made this heart warming hot chocolate with the goodness of oat milk, h**p seeds, dutch cocoa powder, maple syrup and oat creamer for the richness..and of course lots of vegan marshmallows, chocolate and cacao dust!!

A funny story behind the scene during styling the marsh mallows kept sinking in the hot cocoa but finally clicked a perfect shot and of course my kids enjoyed the extra marshmallows with pleasure!!🤩

Diwali is all about spreading love, being grateful for all the blessings we have, spending time with your family (even though it’s virtual for some of us),sharing the joy through making homemade Indian food and sweets, hoping fo create a more positive, bright and happy tomorrow!! ✨ ✨

Today as we prepare for the Laxmi Puja, decorating the house with homemade diwali cards, pretty clay lamps and colorful floral rangoli, I also made my mother-in-law’s Suji halwa infused with cardamom, saffron and garnished with pistachios and almonds.

Witch-ing you a Happy Halloween 👻 👻!!

Discovered this mysterious spider attack on our house and a creepy witch🧙‍♀️ brewing potions 🧪 in her cauldron for tonight. Her wicked laughter can be heard and as she sends her creepy spiders 🕷 to feed the hungriest ghouls with these decadent and spooktacular chocolate ganache cupcakes 🧁!!

Pumpkin muffins anyone? 🎃

Made these moist vegan muffins today with pumpkin purée, warm spices, white whole-wheat flour and sprinkle of powder sugar to celebrate the today!

While the muffins were baking in the oven and the whole house smelled amazing, I made my delicious lemongrass chai tea latte and enjoyed munching with a warm muffin right out of the oven.

Who else is enjoying warm apple cider this fall season? 🍁

Last year, we really enjoyed visiting the apple orchards in Charlottesville, Virginia area. Hand picking sweet and crisp apples🍎 , enjoying hot cinnamon donuts, sipping warm apple cider and kids running around pumpkin patches is some of the memories we recall from the last year.

This is our first action shot on our page🤩 I was quite nervous and excited to capture the smoke but was very happy with the end result! Cheers to this beautiful fall season and gorgeous colors of the East Coast around this time!

Would you like a rich and silky “ VEGAN CHOCOLATE MOUSSE”? Well come on down..It’s a perfect treat to satisfy your sweet tooth and is made with dark chocolate ganache, instant coffee, cinnamon, maple syrup and vanilla essence. Garnished with fresh coconut whipped cream and fruits for an elegant presentation!

Serve it in pretty cups and you have a rich chocolate flavored dessert that is so healthy (avocado and tofu-free) and easy to make for your sweet cravings or for any special occasions!
