Beet latte anyone? I am crazy about lavender latte, pumpkin late, pistachio latte…you name it. So, I decided to try this beet latte. But I confess that I never thought I would be adding beet latte to my list of favorite lattes.
And check out these ingredients…no artificial flavors, just good stuff. My friend took it before going to bed and slept like a baby. So, tonight I’ll try it too. But this morning I prepared mine with a shot of coffee and it was delicious. Can’t wait to try my new evening caffeine-free latte. Don’t know if I will sleep like a baby, but if not at least it will be the second treat of the day. 😉😋

Are you one of those people that think a meal is not a meal if there’s no meat? If yes, it’s because you have not yet tried this eggplant “steak”!
And it’s very simple to make it. Here is the recipe. Try and let me know if you liked it!

INGREDIENTS
2 medium eggplants
Olive oil
Sea salt
Ground pepper
¼ cup tahini
2 heaping tablespoon white miso
2 teaspoon soy sauce or tamari
1½ tablespoons fresh lemon juice
1 teaspoon toasted sesame oil
Big pinch red pepper flakes
Pinch of sea salt
1/3 cup water

HOW TO:
Slice eggplant lengthwise or into rounds about ½ inch thick.
Heat your grill or grill pan over medium-high heat. Brush with olive oil on both sides of eggplant slices.
Season with salt and pepper. Grill until tender and slightly charred, 3–4 minutes each side.
Meanwhile, in a small bowl whisk together tahini, miso, soy sauce, lemon juice, sesame oil, red pepper, salt and water.
After soft, drizzle dressing over warm eggplant and add green onions to decorate. Cook just for 10 minutes and it’s ready to serve.
Any leftover dressing can be stored refrigerated for up to 1 week.

This SALAD IN A JAR was probably my best one. Somehow the combination of ingredients and dressing that I made was the best! Even I couldn’t believe how good it was.The great thing about them is that you prepare them all in one day and you have a salad handy whenever you need it. Just remember to start with the dressing (preferably homemade, I made a mustard dressing with garlic, olive oil, salt and pepper), this way there will be no added sugar in them or preservatives, but good oils. Then, you just add whatever you would like to add that will not be mushy by the dressing. In this case I added cherry tomatoes in half, garbanzo beans, half green apple in cubes, thin slices of red onion, and heart of palms. And the last one is the greens. In this case was Arugula. Yummy!!!😋 try this salad and let me know.

BANANA FLAN WITHOUT ANY WHITE SUGAR
I used to love flans, but flans are trick to make, they are also loaded of sugar due to the condensed milk and melted sugar glaze and have dairy.
So do you want to try this amazing Banana Flan that is super tasty and sweet without any added sugar? Then jot down this recipe.
INGREDIENTS
4 ripe bananas (when you start to see black dots in the yellow peel, but not all black)
4 eggs
1 can of coconut milk
Dates syrup (pure syrup, not the ones with added sugar)
HOW TO
Preheat oven with 350 F.
Blend the first 3 ingredients in a blender and set aside.
Get a flan pan and cover the inside of it with a generous amount of dates syrup.
Pour the flan on top of the syrup. Cover it with aluminum foil. Take it to the oven in Mary’s bath for 1 hour. I like to remove the foil 15 - 20 minutes before it’s ready, so it can get a little tan color.
Ah, and did I mention this flan is super easy to make it? Hope you enjoy it!

Do you have 20X20 vision? I don’t, but I certainly have not lost my hope that one day I’ll have it back. About 15 years ago I heard the amazing story of Meir Schneider. That was born blind and after many attempts to cure his disease without any success once found out about some eyes exercise and not having much to lose started to practice them. Many years later he could see and even drive his kids to school.
Ever since then I purchased a program from Tatiana Gebrael and this past week I listened to 4 classes of Dr. Ainhoa de Federico from University of Toulouse. The first university in the world to teach Natural Vision. And today I did my first Sunny exercise in front of these amazing sunset.
May this be the beginning of my future 20X20 vision and anybody’s else that desire to recover one of our best gifts…our eyesight!

I haven’t shared a recipe with you guys in a while, so to compensate for all this time I will share my favorite bread these days. It’s my brother’s recipe, so be assured it’s healthy and low glycemic bread (he’s diabetic and follows his diet very strictly).
Oh and did I say it’s very, very easy to make it in comparison to other breads?
INGREDIENTS:
2 cups almond flour
3/4 cup einkorn flour 3/4 cup flax seeds flour 2 tbsp of baking powder 3 eggs
1 1/2 cup of plain yogurt Salt to taste
HOW TO:
Preheat your oven to 350 F.
Mix well all dry ingredients first. Then beat the eggs, mix it with it the yogurt and add this wet mixture to the dry mixture. Once this is well mixed it’s ready to take to the oven.
Grease a bread pan or use parchment paper. If you would like you can sprinkle Parmesan cheese on top or you can do an egg wash. I opted for the cheese on mine. Bake for about 1 hour.
And voilà!!!

The holiday season is busy for all of us, but especially busy for those born in December. So, I am a little bit late, but still wanted to share this beautiful message that really expressed what I wish for all of us in 2025. May this year be the best year of our lives yet!

My desire for you in 2025 is that you heal yourself a little more, that you take care of yourself more, that you release what no longer serves you - the weight, the traumas - and that you keep only the power of the learned experiences of the past. Therefore, I wish that in 2025 you’ll be lighter and more loving with yourself and others. After all, we are all inhabitants of the Earth... and we need a lot of LOVE to cure it! May you seek strength in your beliefs, in the sun, in the moon, in the sea, in the air you breathe, in the relationships with your loved ones and in the flowers...

My name is Flaviah Campos. My interest in health and wellness started back in 2011 when I was 44 and late for my first mammogram since it is recommended to be done after the age of 40. So, after my first mammogram for my total surprise it was positive and I was told I had DCIS, which is an early stage of breast cancer and needed to do a lumpectomy right away. Needless to say I was in shock! At the time I thought I was super healthy, I had none of the characteristics of person in risk of getting the disease. I was thin, I exercised, I didn’t drink, I had no history of breast cancer in the family and in my head I was too freaking young to have cancer!
