Before I started eating this way, oatmeal was one of my favorite foods for breakfast, and I loved Maple and Brown Sugar in it or a large quantity of blueberries. Once I realized how many carbs and sugars I was starting my day with, I made a shift, and had to create my own high-protein, low-carb version. I like to break it into portions to make for a quick grab breakfast or lunch.

This is so good and can be “doctored up” in so many ways, whether with brown monk fruit or allulose and maple extract or maple low-glycemic syrup, or with cinnamon and sweetener, or a small handful of berries or even some pecans. It’s even a great way to break your fast midday.

Trying my High-Protein Low-Carb Chicken Ramen 🍜✨

This bowl is cozy, savory, and packed with protein without the carb crash. The “noodles” are zucchini — either spiralized into long ramen-style strands or chopped into little macaroni-style triangles for a heartier bite.

It’s loaded with shredded chicken, fresh spinach, and beaten egg stirred right into the hot broth so it ribbons throughout. Then liquid aminos bring that deep umami flavor. You can add more pink salt or aminos to taste, and if you like heat, a little cayenne pepper takes it up a notch.

Simple ingredients. Big flavor. Real fuel.

You can mix in another noodle alternative if you want, but the zucchini absorbs the broth beautifully and keeps it light while still feeling comforting and satisfying.

You can even dilute it with a little water to your desired consistency for a simple marinara sauce. Xariya loves to use it this way on palm heart noodles, lupin flour noodles, or even cauliflower rice. Choose pizza sauce and paste that is sodium free for a better option.
