Are you needing a quick and easy breakfast for your Monday mornings? Try out this healthy recipe tomorrow! Avocado toast is packed with fiber and is full of unsaturated fats. This effortless recipe is sure to brighten your morning!

Ingredients:
• 2 pieces of toast
• ½ avocado
• ¼ tsp lime or lemon juice
• ¼ tsp salt and pepper, combined
• Herbs: cilantro, parsley, ect. (optional)
• Poached egg (optional)

Instructions:
1. Toast your bread
2. In a small bowl, add ½ ripe avocado. Mash it with a fork.
3. Squeeze a thick slice of lime or lemon over your avocado. Season it with salt and pepper.
4. Spread the avocado mixture on the bread.
5. Add additional toppings: egg, herbs, more black pepper, or even edamame for more protein!
