We have covered juniper berry, Rose hip, amaranth, and poke w**d.
We are going to pick up with Wild Carrot (Queen Anne's lace) and discuss poison hemlock along with it...I'm still learning this phone I got today and am really struggling. ...will try to get it together by tomorrow evening :)

To prepare the grain: 1/2 cup amaranth to 1.5 cup water
To prepare the leaves: in pan with garlic cloves and oil, salt to taste

This is a good time of year to talk about amaranth...
Midwest farmers tend to treat amaranth as a problem w**d, resistant to many herbicides, within their crops. All the while, this sneaky plant holds more nutrition than the crops it invades!!!!

Speaking of invasions....it was outlawed by the spanish and was previously a staple in aztec culture...they even celebrated an amaranth thanksgiving.

The are over 75 types with various names to include Hopi red dye amaranth and blood amaranth.

Some brighter colors are used for dye. There are beautiful variations, even Golden amaranth

It contains good fats, 5 grams of fiber and 9 grams of protein!!!

We will learn more about it tomorrow!!!!
