1 tsp chia seeds
1 egg white
1 heap Tbsp vanilla protein powder

I made chocolate mousse out of avocado today! I’ve never made before, I’ve always thought it was a bit of a waste of an avo and would rather enjoy it on toast or added to dinner. But I had 6 over ripe avos in my fridge so thought I better finally give it a go. It was deelish, super creamy, sweet and decadent πŸ˜‹
CHOC AVO PROTEIN MOUSSE
1 ripe avocado
2 Tbsp maple syrup
2 Tbsp cacao powder
1 Tbsp chocolate Happy Way protein powder
1/2 tsp vanilla extract
Pinch of sea salt
1/4 cup coconut cream or milk
Blend it all together, taste and add extra maple syrup, cacao or milk as needed 😊🀎πŸ₯‘

Chia and Yoghurt Parfait
INGREDIENTS:
ΒΎ cup Anchor Probiotic+ Natural Yoghurt
1 tsp maple syrup or honey
1 Tbsp chia seeds
Β½ cup your favourite granola
β…“ cup frozen blueberries
1 nectarine, roughly chopped
INSTRUCTIONS:
In a small bowl, mix the yoghurt, maple syrup and chia seeds. Leave in the fridge for at least an hour.
In a glass, layer the parfait starting with a couple of tablespoons of granola, chia seed yoghurt mixture and fruit then repeat until you have used up all the ingredients.
You can eat this straight away or it’s also yummy if you leave it in the fridge for a bit and let the granola soften slightly.
