Healthy & delicious dishes and a dash of inspiration. Honestly, it couldn’t get any easier. Diets were never my thing, which is ironic now that I have a whole page dedicated to healthy eating and lifestyle choices! But, it’s the truth, and I know so many of you feel the same way, too. With so many to choose from, all of them being praised and criticized simultaneously, it feels like a minefield of disaster. Is it really healthy? Will it do what I want it to do? Will I miss out on all the fun? Is it good for my body? Those were just some of the thoughts running through my mind when I was looking up the next trend, the latest ‘answer’ to my problems. They never lasted long, and I’d end up more depressed than I was to start with as the feelings of failure flooded in, yet again. All I wanted to do was curl up in my lounge and hope that I had better luck next time around. But, you know what? I was sick of it. Sick of the pressure, the failure, the constant feeling of missing out. I didn’t want to miss out anymore. I wanted to be PART of it, all of it, no matter what it was. So step by step, I started to figure it out. I began to understand what was healthy and what was part of a failing ‘fad’. From there, I paved the way to my success, far away from all the diet ‘expert’ advice. At Anne’s Lounge, I want you to feel a part of it, too! Let’s bend the rules, eat great meals, use new ingredients and do it our way. Grab a tea, take a deep breath; you’re in the right place. Vegan Pimento Cheeze Dip

Ingredients
1 cup raw Cashews (soaked and drained, if desired) (130 g)
¼ cup Nutritional Yeast (15 g)
1 tsp Kosher Salt
½ tsp Mustard Powder
½ tsp Onion Powder
¼ tsp Garlic Powder
¼ tsp ground turmeric (optional, for color)
⅛ tsp Paprika
1 Tbsp Lemon Juice (15 mL)
1 Tbsp Rice Wine Vinegar (15 mL)
⅓–½ cup Water (80–120 mL)
1 cup Shredded Carrots (110 g)
½ cup diced canned Pimentos, drained (100 g)
Dash of Hot Sauce, if desired

Instructions
1. Place cashews in a food processor and process to a coarse meal. Add nutritional yeast and spices and pulse to evenly distribute. Add lemon juice, vinegar and ⅓ cup water and puree, adding additional water as needed, to make a thick and creamy consistency.
2. Place cashew mixture in a bowl and fold in shredded carrots and diced pimentos. Season to taste with hot sauce. Serve immediately or cover and store chilled until ready to use.

S-Adenosyl-L-Methionine (SAMe)

S-Adenosyl-L-methionine (also called S-adenosyl methionine, S-adenosylmethionine, SAMe, or SAM-e in the United States or ademetionine in Europe, and also often abbreviated as SAM and AdoMet) is a chemical that is found naturally in the body. SAMe is sold in the United States as a dietary supplement.

SAMe was discovered in the early 1950s. It’s made in the body from methionine, an amino acid found in foods. It has been found to regulate key functions in living cells.

Abnormal levels of SAMe in the body have been reported in liver diseases and depression. This prompted researchers to investigate whether SAMe might be helpful in treating these conditions. The idea that SAMe might be helpful for osteoarthritis came from studies of SAMe for depression. Some of the participants in the depression studies who also had osteoarthritis said their joint symptoms improved when they took SAMe.

Background:

Ensalada De Quinoa

Ingredients
2 cups Organic Red Quinoa cooked and cooled
1 1/2 cups Yellow Corn Kernels fresh or frozen
1 1/2 cups Lima Beans fresh or frozen
1 cup Queso Fresco or Goat Cheese crumbles
1/2 cup Red Onion diced
1/2 cup Cilantro chopped
2 Tbsp Extra Virgin Olive Oil
2 Tbsp Lime Juice
1 Tbsp White Wine Vinegar
1/2 tsp Salt
1/4 tsp Black Pepper

Instructions
1. Combine quinoa, corn, lima beans, cheese, onion and cilantro in a large bowl.
2. In a small bowl, whisk well together oil, lime juice, vinegar, salt and pepper. Pour over salad and mix well.
3. Serve chilled or at room temperature.

Vegan Burger Buns

Ingredients
2 cups unsweetened Plant-Based Milk, warm (500 mL)
1 ½ tsp Active Dry Yeast
1 ½ Tbsp Sugar
2 Tbsp Olive Oil
3 ¼ cups Bob's Red Mill Organic Unbleached All Purpose White Flour (442 g)
1 ½ tsp Salt

Instructions
1. Preheat oven to 425ºF and line a baking sheet with parchment paper.
2. In a small bowl whisk together milk, yeast and sugar. Let sit for 5 minutes while the yeast activates, then whisk in oil.
3. In the bowl of a stand mixer fitted with a dough hook, add flour and salt. Pour in the yeast mixture and knead on medium for 5-7 minutes. If kneading by hand, this will take 8-10 minutes.
4. Turn the dough out onto a floured work surface and divide into six equal pieces.
5. Pinch the edges of the dough together and place the pinched side face down on your work surface. Cup your hand over the dough and roll until a taut ball forms, about 10 seconds. Place on prepared baking sheet. Repeat with remaining pieces, cover with plastic wrap or a damp towel and let rest for 10 minutes.
6. Remove the covering and bake for 10-15 minutes, or until golden brown. Let cool on a wire rack, serve and enjoy!
