What does cooking WFPB meals look like….it looks like this, and it was so very yummy!!

I’ve been stuck with my weightloss for a few weeks now. I’m trying to focus on my 3 meals a day and see if it makes the scale move. Also trying to just avoid the scale and not pull out my hair when I do get on it!

So, posting consistently is just not my thing apparently, but I figured I’d let people know that I’m still going strong....

So, posting consistently is just not my thing apparently, but I figured I’d let people know that I’m still going strong. I started all in on October 1st. I have lost 24 lbs and 25 inches across my body. I eat a Whole Foods Plant Based Diet (no meat, no dairy, no oil, no processed foods). I lift weights 3x a weeks, and try to fit in some long walks or cardio when I can. I try to do an Inbody scan 1x per month as well to manage my muscle mass and body fat %

These are all good things but I felt myself feeling down today. 2026 feels like a heavy year due to some things out of our control and I still have so far to go on my weightloss/health journey. I’ve lost 24 lbs and have at least 36 more to go, but I second guess myself wondering if it is really even a possibility. Can I really go this…all the way.

Regardless, here some pictures of some foods I’ve eaten recently, and some starting and current pictures (the ones I’m willing to share). Slowly but surely (the left is the staring, the right is today)

I’m 5 weeks in and down 11.2 lbs! I’m feeling pretty good about that.

My dog passed away and after we buried him we took everyone out to dinner to Pizza Pie Cafe (a pizza buffet) I stuck with the salad bar, but I did forget my dressing, so I had some ranch 🤪

I met with a Dr and am going to get blood work done tomorrow. I’m slightly nervous about that, we will see what shows up.

Picture is of tonight’s dinner. Potato wedges and strawberry nice cream. I think i left out the bananas when i was making this, but it still tastes good! Also, I’m think I need something other than homemade ketchup, because I’ve tried 2 recipes and don’t like either of them. I think I just need some type of other sauce to dip it in.

I do my weight and measurements every Wednesday morning. This week I’m down 2.6 lbs, for a total of 9.5 lbs in 4 weeks! I’m feeling good about these numbers! Slow and steady!

Here’s some of what I ate this week!

I’m pretty much out of prepped stuff so I need to find some time to do that. The thing that has helped me the most is to stick to 3 meals a day. I honestly think that has made a big impact in my mindset.

I’m 26 days into this journey. Im weighing myself weekly and at at my 3 weeks mark i was down an additional 1.3 lbs and my total weight loss was 6.9 lbs. This week I learned that I can still double Dutch, which I was super proud about, and in my weightlifting class I did box jumps for the 1st time ever.

I went and did a InBody scan to get a better picture of my overall fat and muscle etc. The last time I did a scan was in May, so it’s been awhile. I was hoping to see some muscle gained, because I’ve been doing the weightlifting 3 days a week for a couple of months now. Sadly, my muscle didn’t go up. However, the guy told me that it was really good that my fat dropped and my muscle stayed the same. He said it’s really hard to lose fat and gain muscle at the same time, and said to keep focusing on losing fat and maintaining muscle, so that’s what we be doing! Im still trying to find a doctor i d**g hate so i can get some bloodwork done to get a baseline

I did not have a lot of time to meal prep, so there was a lot of whole wheat sourdough with almond butter and fruit for breakfasts.

I did make this amazing casserole with lentil penne, roasted butternut squash, and Italian sausage baked tofu, with a provolone cheesy sauce. It took forever to make, and I kinda burnt the tofu, but it was really yummy, and I’ve been glad to have it on hand.

These are something’s I prepped this weekend . Mashed potatoes (i was testing gravy recipes), quinoa and roated sweet potatoes, pumpkin cookies with mapke frosting (put these in the freezer last night, and they were amazing just out of thr freezer)

I completed week 2 of this life long journey and lost 3.6 lbs for the week, and 5.6 lbs total. I remember years ago when I did a program that included protein shakes and intermittent fasting. My first week on that program I lost 7 lbs and it was amazing, and I went on to lose a total of 35 lbs. However, I hit a point where it became unsustainable. It was expensive, and as life got ahold of me, the only thing keeping me from gaining was those weekly cleanses. Which I appreciated, but it wasn’t realistic long term. I want to gain true health that is a true lifestyle change and is everlasting.

I don’t exactly know what that will look like long term, but I do know what that looks like right now, and its slow and steady. I want to lose 60 lbd and im giving myself 12-18 months to do it. Here’s what that might look like.

Average of
2 lbs per week - 30 weeks/7 months
1.5 lbs per week - 40 weeks/9 1/2 months
1 lb per week - 60 weeks/14 months5 lb per week - 120 weeks / 27 months

Wherever I land, i just want to continuously be making progress

I’ve started taking pictures of my meals so I can easily track what I’m eating. Mind you, I’m not tracking calories, just tracking my food and if it was on plan or not. Here’s some pictures over the last couple of weeks so you can get an idea of what eating this way looks like!
