🍕Quinoa Flatbread/pizza base with tofu cheeze🍕

I was pleasantly surprised when making this flatbread, I thought it would require lots of ingredients and exact measurements😴

But it did not 😆🎉

This is a very very simple recipe for anybody!! All you need is a blender or food processor 🤠

This recipe is only for one serving

Ingredients for the base :
•85g dry quiona
•1/4 tsp salt
•1/2 tsp baking powder
•100ml water

Ingredients for the tofu cheeze:
•100g soft tofu
•1/4 tsp salt
•1/4 tsp turmeric
•1/2 tsp paprika/smoked paprika for smoked cheese
•1/2 basil
•1 tbsp of nutritional yeast

Ingredients for homemade pizza sauce:
•4 slightly roasted cherry tomatoes
•100g raw white onion
•spices of your choice
•40g kidney beans(to thicken sauce)

Method for base :
•soak dry quinoa in 175ml of water for at least 15min
•drain quinoa and add to your blender, add salt,baking powder and water and pulse until you're happy with the consistency
•transfer to a double lined cake tin and bake at 190• for 25 mins

Method for cheeze:
•add all ingredients to a blender with just enough water to help blend ingredients
•transfer to a pot and cook in low heat until you reach the consistency you're happy with.

For the cheeze sauce you can also sub the tofu with cashew nuts, if so add tapioca starch when cooking in the pot to thicken up your cheeze.

Method for pizza sauce:
•roast tomatoes in the oven or fry on a pan until they're just cooked
•add everything to a blender and add water or tapioca starch for your desired consistency.

🍪Chickpea cookie dough🍪

I was honestly a little bit surprised myself how similar this chickpea cookie dough is to your average cookie dough🤤🤤

I'm sure if you add 1 tsp of baking powder you can use this as actual cookie dough and bake it at 180 for 10 mins to make cookies but I couldn't wait 😅 lol

✨Ingredients✨
🍪1 can chickpeas rinsed and drained
🍪1 tbsp oats
🍪10g cacao nibs(or choc chips)
🍪1 tbsp chia seeds(optional)
🍪75ml coconut milk
🍪1 tsp coconut oil
🍪1 heaped tsp mixed spice
🍪1 tsp maca powder
🍪2 tbsp maple syrup
🍪2 tsp vanilla essence

Add everything to a blender except the coconut milk and pulse gradually adding the coconut milk until you're happy with the consistency ☺️

Enjoy and be careful this stuff is addictive 🤤🍪

🌿fruit&Nut salad with hazlenut dressing🌿

🥗For the salad🥗
•119g Orange🍊
•76g Plum
•70g Kiwi🥝
•80g Black Forest berrie mix🍇
•146g apple🍎
•25g pecan nuts
•15g pumpkin seeds

🌰For the dressing🌰
•Soak 1 bag of hazelnuts in hot water for 5/10 mins or roast for 10/15 mins
•Transfer to a blender or food processor and pulse until you reach the consistency you're happy with

I made this nut butter thick and kept it in a jar, everytime I want to use the butter I add boiling water or hot coconut milk to whatever amount I take out and make it the consistency I would like 😆

Macros for this amazing meal
•562 cals
•11g protein
•60g carb
•32g fat

Although this meal is slightly high in the calorie, I would recommend having it for breakfast or lunch as it is extremely satisfying and leaves you feeling noway stuffed or bloated just ready to tackle your day 😎💪🏽

🔥Smokey cashew sauce🔥

•1 bag of salted cashews
•2 Garlic cloves
•Lemon juice to taste
•2 tbsp Nutritional yeast
•1 tsp Smoked paprika
•dash Turmeric(just for colour)
•1/4 cup non dairy milk
•Pepper to taste

⚡️Method⚡️
•soak cashews in hot water for 10/15 mins
•add everything into a blender or food processor and pulse until you're happy with the consistency
•add to pasta on a low heat leave to go warm up for 3-5 mins

You can add any veggies you like, but I highly recommend you add sweetcorn it is the best combo for this sauce😎

Easy peasy go try it you won't be disappointed 😁

🌰🍫Raw Nutella anyone 🍫🌰?

Amazing on toast and a perfect dip for strawberries 🍓 Such simple ingredients and all you need is a blender⚡️

Ingredients:
🌟1 cup hazelnuts
🌟1/4 cup or 2 tbsp maple syrup
🌟1/4 cup water
🌟 1 1/2 tbsp cocoa powder

The method isn't really rocket science just blend the hazelnuts first until they get sticky n a little bit of milk is forming, then throw in the rest of your ingredients and blend until you're happy with the consistency 😸

Not exactly sure how long this will last because it was gone within two days 😂but Keep stored in the fridge for as long as it may last for you, which probably wont be that long either 😋🍫🌰

🌟🍳Tofu scramble🍳🌟

I finally got around to making this and it only took literally five minutes !! So so easy and so flavourful , this would be even better with some spring onion mixed in🌟

I used soft tofu but you can use any tofu you like just make sure to break it up into the small pieces

You can use any spices you like to suit your taste buds but here are the spices I used :

🌟1/2 tsp turmeric
🌟1/4 tsp smoked paprika
🌟1/3 tsp onion powder
🌟1/3 tsp garlic powder
🌟salt and pepper to taste 🌟

Sweet Potato pancakes 🤤✨

Ingredients
•175g boiled sweet potato
•100g gluten free self rising flour
•25g vegan butter
•175ml rice milk
•1tsp ground nutmeg
•pinch of salt
•tsp vanilla extract

•boil 175g sweet potatoe until soft enough to mash approx 10/15 mins
•peel + mash sweet potato and add vegan butter
•add all wet ingredients followed by the dry
•mix well and fry with coconut oil for an even better taste

🌿So after almost a year I've decided to start back up this little page, I'm not sure if anybody even knows it still exists, but for my own sake I'm going to be posting as a hobby and to keep notes of my recipes 😊

The first recipe I have is my go to cookie recipe that is relatively healthy 😉 really quick and simple.

•Cinnamon Oat Cookies•

•1 cup of oats
•1 cup of gluten free self-rising flour
•1 tsp of cinnamon
•1 tbsp of brown sugar
•1 tsp vanilla extract
•2 tbsp maple syrup
•1 tbsp of peanut butter
•1/4 cup of dairy free milk

•Baking•

•bake for 10-15 mins (until golden brown) at 180'

Gluten free Banana chocolate chip muffins

Ingredients
3 cups of gf self rising flour
1 cup white sugar
1/2 cup brown sugar
2 tsp cinnamon
1 tsp nutmeg
1 tsp salt
2 mashed bananas
1 cup coconut oil
1 cup hazelnut or any dairy free milk

Instructions
Add all dry ingredients into a large mixing bowl, then add melted coconut oil, milk and mashed banana and stir until all ingredients are combined, bake for 30/35 mins at 180

Protein balls

Ingredients:
3/4 cup oat flour or medium cut oats
1/2 cup chickpeas
4 tsp of chia seeds
1 tbsp peanut butter
3 dates(soak in hot water for 5 mins)
2 tbsp maple syrup
3 tbsp water
2 tsp vanilla extract
1 tsp vanilla essence
1 tsp cinnamon
1 lemon// orange// lime

Instructions:
Add flour, chickpeas, peanut butter, chia seeds, vanilla extract, cinnamon, vanilla essence, water, maple syrup, and dates( make sure you pit them) to a blender and blend until they start to stick together.Add more water by the tbsp if needed, after you blend the first few ingredients add the zest of your lemon and blend again, once everything is combined form into balls and let set in the fridge for about an hour, keep stored in the fridge and enjoy :)!

Vegan macaroni and cheese🧀

Ingredients
3 cups macaroni

For the sauce
1 1/2 cup of non dairy milk
3/4 cup soaked cashews
1/4 cup of oil
2 tbsp lemon juice
3 tbsp of tomato purée
1 tbsp miso paste
2 tbsp nutritional yeast
2 tsp arrowroot flour
1 tsp garlic powder
1 tsp onion powder
1 tsp sea salt
1/2 pepper

**Soak cashews for 3 hours at least**

•Cook the pasta according to the package
•In a blender combine all ingredients and blend until smooth
•put the pasta into a baking tin and pour the sauce on top and mix up until all the pasta is covered
•cover with tin foil
•bake for 20 mins at 180
•enjoy
