🍕Quinoa Flatbread/pizza base with tofu cheeze🍕
I was pleasantly surprised when making this flatbread, I thought it would require lots of ingredients and exact measurements😴
But it did not 😆🎉
This is a very very simple recipe for anybody!! All you need is a blender or food processor 🤠
This recipe is only for one serving
Ingredients for the base :
•85g dry quiona
•1/4 tsp salt
•1/2 tsp baking powder
•100ml water
Ingredients for the tofu cheeze:
•100g soft tofu
•1/4 tsp salt
•1/4 tsp turmeric
•1/2 tsp paprika/smoked paprika for smoked cheese
•1/2 basil
•1 tbsp of nutritional yeast
Ingredients for homemade pizza sauce:
•4 slightly roasted cherry tomatoes
•100g raw white onion
•spices of your choice
•40g kidney beans(to thicken sauce)
Method for base :
•soak dry quinoa in 175ml of water for at least 15min
•drain quinoa and add to your blender, add salt,baking powder and water and pulse until you're happy with the consistency
•transfer to a double lined cake tin and bake at 190• for 25 mins
Method for cheeze:
•add all ingredients to a blender with just enough water to help blend ingredients
•transfer to a pot and cook in low heat until you reach the consistency you're happy with.
For the cheeze sauce you can also sub the tofu with cashew nuts, if so add tapioca starch when cooking in the pot to thicken up your cheeze.
Method for pizza sauce:
•roast tomatoes in the oven or fry on a pan until they're just cooked
•add everything to a blender and add water or tapioca starch for your desired consistency.
