Sounds completely gross but I had some leftover coffee in the pot this morning that I didn’t want to go to waste so I added a scoop of my cinnamon crunch protein powder in it for a the tasty fall treat to finish my coffee and get in my second fueling of the day!

Yummy lunch on tap today! Shrimp, scallops, spring mix, spinach, kale, and a Mediterranean herbed lemon dressing! 15.4lbs down after 8 weeks of eating 6 macro balanced meals daily at 3 hour intervals…and I feel fantastic! The hardest part of my journey has been making myself eat not long after I get up. But it’s been SO worth it! Here’s to the next 15!!

Tonight’s lean, green…

A quick adaptation of two lengthy recipes. Italian sausage, peppers, onions, mozzarella, palmini noodles, and spinach.

I started browning the Italian sausage and chopped the onions, palmini, and peppers. When the sausage was half browned, I threw the rest in there together for a few minutes.

I put one layer of the mix in a baking dish, added a few mozzarella pearls, then a second layer of mix, topped by a few more pearls. Baked at 325 for 25 minutes. Plate with spinach and voilà!

This can be easily modified for taste preference or diet. Ex: switch palmini for riced cauliflower or make leaner by using ground turkey.

Another quick, healthy dinner idea - 3oz reheated brisket, lightly sautéed onions, peppers, and kale, and a few slices of avocado. If you can handle more carbs, add a tablespoon of bbq sauce (we use what’s pictured), and cubed sweet potatoes.

Another lean, green, and microbalanced quick meal for the family tonight (mine adjusted slightly). Sam’s pulled pork in a box (microwaveable), a helping of healthy greens, a few slices of avocado for healthy fats, fresh basil, Sir Kensington’s chili lime cream, a dollop of sour cream, anda sq**rt of lime juice. Voila! Only 6 minute cook time for pulled pork in microwave. Paper and plastic = NO CLEANUP!
