Tonight’s lean, green…
A quick adaptation of two lengthy recipes. Italian sausage, peppers, onions, mozzarella, palmini noodles, and spinach.
I started browning the Italian sausage and chopped the onions, palmini, and peppers. When the sausage was half browned, I threw the rest in there together for a few minutes.
I put one layer of the mix in a baking dish, added a few mozzarella pearls, then a second layer of mix, topped by a few more pearls. Baked at 325 for 25 minutes. Plate with spinach and voilà!
This can be easily modified for taste preference or diet. Ex: switch palmini for riced cauliflower or make leaner by using ground turkey.
