This afternoon, I was lucky enough to bump into Michael Caballo, who owns and operates with his partner Tobey Nemeth. And even though Edulis is considered to be one of the VERY BEST restaurants in North America, Michael was super friendly, humble and totally down-to-earth. So inspiring!
