Teriyaki Chicken with Broccoli and Brown Rice,
Yields: 4 servings
Prep time: 15 minutes
Cook time: 20 minutes
Ingredients:
* 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
* 1/2 cup teriyaki sauce
* 1 tablespoon soy sauce
* 1 tablespoon honey
* 1 tablespoon rice vinegar
* 1 tablespoon minced garlic
* 1 teaspoon grated ginger
* 1 head broccoli, cut into florets
* 1 cup cooked brown rice
Instructions:
* Make the teriyaki glaze: In a small bowl, whisk together teriyaki sauce, soy sauce, honey, rice vinegar, garlic, and ginger. Set aside.
* Cook the chicken: Heat a large skillet over medium heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes.
* Add the glaze: Pour the teriyaki glaze over the chicken and cook for 1-2 minutes, or until the sauce has thickened.
* Cook the broccoli: Meanwhile, steam or boil the broccoli until tender-crisp, about 5 minutes.
* Assemble the bowls: Divide the cooked brown rice, broccoli, and teriyaki chicken between four bowls.
* Serve: Serve immediately and enjoy!
