🍓Who doesn't love strawberries?🍓All those awesome antioxidants…
⚛ The biology basics…
Simply put, antioxidants (ao's) are molecules that fight free radicals* in your body. *According to (NCBI - National Center for Biotechnology Information, a free radical can be any molecule that has an unpaired electron. They are unstable and react quickly with other substances to match their unpaired electron(s). They can either donate or accept an electron from other molecules and can damage important molecules such as DNA, proteins, carbohydrates, and lipids in the nucleus, and in the membranes of cells.
♨️ Free Radicals occur...
Either from normal essential metabolic processes in the human body, or from external sources such as (to name but a few)... exposure to X-rays, ozone & sun exessively, cigarette smoke, air pollutants, industrial chemicals. Also as a result of high blood sugar levels, bacterial fungal & viral infections, or intake of too much iron, magnesium, copper, or zinc....
Our genius bodies 🙏🏽are capable of creating their own (endogenous) ao’s to keep these free radicals at bay. But we can help out a lot by getting even more (exogenous) ao's from our food. And in the toxic world we’re living, the more we can get the better!
Oxidative stress is the imbalance where free radicals >antioxidants, leading to DNA and cell damage and thus aging and other chronic degenerative diseases like cancer.
🌈 The Antioxidant Factor - Eat the Rainbow
Since all forms of life have an antioxidant defense mechanism, eating other species (plants particularly) allows us to benefit from theirs.
Vitamins C and E are the big ones. Selenium, and carotenoids, such as beta-carotene (precursor to Vit A found in red-orange foods like 🥕 and 🍠) are also effective ao's. And of course more not mentioned.
NB - food preparation can ⬆️ or ⬇️ ao availability. E.g The ao in tomatoes, Lycopene, becomes more bioavailable (easier for our bodies to use) when heated. Whereas frying of certain veggies can reduce the ao levels.
So as always, variety is king - change (and spice) it up a lot. And remember the coffee and chocolate ☕🍫 ummm hell yeah!
