Eating the last of Xmas for breakfast before back to my 9-5 work!

Have had 4 days off with my family and we’ve just spent time resting and being at home with plenty of walks to get fresh air and stretch our legs. It’s been bliss. And a reminder of how important just the simple things are 💚

I’m not one for setting intentions as such for New year, I kinda like to plan day by day but 2025 was a busy blur and I’m hoping 2026 can be a slightly lower pace!

Getting in extra nutrients where I can as mum/work life balance is being tested this time of year and we have commitments every day after school so stress is high and proper home cooked meals are on the low. Making sure I can max up nutrients such as Fibre/iron and protein through the day is vital right now until we can reset back to our normal routine!

As we race to the finish line of the year I just wanted to express a massive thank you to all my beautiful clients who chose to allow me to support their health journeys this year!

It was a big gamble moving from a clinic space to phone/online consults and I’ve been blown away by the continued support whether it be booking in as a new client, the lovely follow ups and every new order that comes in. Week by week it’s exceeded my expectaions and its all by word of mouth so thank you, thank you, thank you 😘

I’m booked right up to Xmas, have some limited availability for January and then fully back into normal schedule from Feb 12th.

Sometimes in clinic consults for specific health conditions and/or to assist in gut healing I have to deliver the news of A GFDF diet (gluten free/dairy free) and I tell you every time I see fear in the clients eyes. And the question that follows “but what will I eat?”

We are so conditioned by marketing that it’s initially daunting but once you remember most basics are actually compliant you can start to have some fun in the kitchen! I promise 💚

Today’s lunch post an amazing yoga class is:

3 mushroom rice with onion and garlic and turmeric bone broth served with fresh oregano/parsley and baby rocket folded through and topped with a h**p dairy free Parmesan style topper.

The flavours are incredible, most of these ingredients are healing foods and low inflammatory and it’s filling my belly with warmness. It took me 15mins to make this on the stovetop.

At this time of year, the wheels start falling off…. You know what I mean 😆

It’s the time of year Women reach out to me and tell me stress of this time of year and trying to continue to eat well is just overwhelming. What do I have for them!! Pronto 😆

So make it easy on yourself.

Firstly, breathe! Breathe In deeply and let it out x5! This can help regulate that fight or flight response you may be in.

Next, just don’t sweat it! Be comfortable letting things slide a little. Lean into the madness of Xmas and all the little extras it’s got going for it.

Now, get some quick wins under your belt. If you’re skipping brekkie or missing meals and not sleeping well then you need to find quick wins or shortcuts to keep your body nourished.

One of the very easiest is adding collagen to your morning coffee ☕️ and if you have 2 coffees a day with collagen then you’re already at 30gm! Protein is essential for repair in the body especially in the gut, regulating sleep and improving brain function.

Quinoa + Cos + Spring onion + pickles + feta + Mayo

Tuna to be added at lunch time.

29gm protein

Start of week I have a smoothie for breakfast high in fibre & protein, fruit and nuts for snacks and protein rich lunches and dinners made with a combo of basics always kept in the fridge and pantry. Always plenty of vegies 🥦

End of week I reverse and have a later big brekkie, a picnic snack lunch and early dinners.

I don’t count Calories but I do listen Intently to my body and make sure I have my macros right!

Lunch time goodies 🫶

My teen has a thing for crispy chicken…. And I’m not mad 😆

We use chicken thighs cut into 4, keep the fat as that gives the crunch!

I place the chicken pieces into a dish and a mix of 1/4 cup cornflour, 2 generous spoons of garlic & herb and a sprinkle of salt. Prewarm an oiled pan and add a small splash of oil then add your chicken pieces, the trick is leave them on one side until you can hear the crisp then turn and leave them again. The fat renders and gives you the best tasty crunch ever. I use pans which deliver every time 👌🏻

How would you serve it?

He’s a wraps kinda guy and I’m a salad queen 💚
