This vibrant summer salad combines wholesome quinoa, tender baked salmon, and fresh spinach—all ingredients celebrated for their anti-inflammatory benefits.
This is what you need👇
Ingredients
👉 1 cup quinoa
👉 2 salmon fillets (about 6 oz each)
👉 4 cups fresh spinach
👉 1/2 cup cherry tomatoes (halved)
👉 1/4 cup red onion (thinly sliced)
👉 2 tablespoons olive oil
👉 Juice of 1 lemon
👉 Salt and pepper to taste
👉 Optional: feta cheese or avocado slices for extra flavor
Instructions
👉 Cook the quinoa: Rinse quinoa under cold water. In a pot, bring 2 cups of water to a boil, add quinoa, reduce heat to low, cover, and simmer for about 15 minutes until fluffy.
Let it cool slightly.
👉 Prepare the salmon: Preheat your oven to 400°F (200°C). Season the salmon fillets with salt, pepper, and a drizzle of olive oil. Bake on a lined baking sheet for 12-15 minutes, or until cooked through. Let it cool slightly, then flake into large chunks.
👉 Assemble the salad: In a large bowl, combine cooked quinoa, spinach, cherry tomatoes, red onion, and salmon pieces.
👉 Dress the salad: In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over the salad and toss gently.
Serve: Garnish with feta cheese or avocado if desired. Enjoy immediately or chill for a refreshing summer meal!
