These sweet potato and banana muffins are amazing! The recipe comes from on her amazing IG page! They are super easy to make, super delicious and they are healthy and low sugar! These muffins have sweet potato, banana, oats, nuts and nut butter, maple syrup and spices! Oaty Choc Orange Slice! 🍊🍫

This little tasty morsel is not only delicious, but it is also perfect for an anytime snack, on the go breakfast, pre or post workout snack or just for a healthy sweet treat! It is also a great pick me up energy booster and very very easy to make!

Ingredients:
1 cup pitted dates (soaked in boiling water for 5 mins then drained)
1 cup whole oats
1/4 cup desiccated coconut
1 tbsp of peanut butter
2 tbsp cocoa powder
Rind of 1 orange
Juice of half an orange (juice or eat the other half 😋)

Method: Blend all ingredients together in food processor until combined and sticky. Then pat down into a baking tin lined with baking paper. Place in fridge until firm (about 30 min -1 hour).

I decided to have a healthy chocolate overload this afternoon after staying home sick and feeling the need for comfort food 😷🍫
This lovely little plate contains some healthy Pure Harvest Coco Almond Spread with strawberries for dipping, and some lovely Pana Chocolate sour cherry and vanilla chocolate ! Both products are free of refined sugar and are also gluten free, dairy free and vegan friendly 😍

Rice cake with almond butter, sliced apple, blueberries and a drizzle of honey! Perfect snack or post workout snack with some great plant protein and omega-3 fats! You could also make this vegan by substituting the honey for maple syrup, agavae or any other plant sweetener of choice👌💪😍

Today I decided to have oats for lunch instead of breakfast, and eat it outside in this great spring weather! ☀️🌸
In this lovely bowl I have cooked whole oats with strawberry chia jam, a few dates and and sprinkle of shredded coconut 🌴😋🍓
The strawberry chia jam is super easy to make, you can put it on toast, healthy scones or cakes, add it to sweet dishes like oats or muesli or even use it as a topping on some tasty nice cream! It is so delicious that you will never feel the need for standard processed sugary jam again!
Here is the recipe:
Ingredients:
2 punnet of strawberries
2 tbsp honey
1.5 tbsp chia seeds

Method:
Chop the greens off the strawberries and cut each of the strawberries in half.
Place the strawberries and honey in a pot on the stove on a medium heat. Stir until strawberries start to soften and juices start to release. Use a potato masher to mash up the strawberries to desired consistency (If you prefer no lumps, you will have to put jam in blender to smooth out once finished). Once the mixture starts to boil slightly, add the chia seeds and continue stirring for approx 1 minute, then remove from stove and allow to cool for a few mins. Transfer to an airtight jar and place in fridge to cool and finish setting.
