It has been about a month and I still have a bad cough, exhaustion & loss of taste.

I am pretty sure I had Covid way back at the beginning of the pandemic, but this bout was the worst in one aspect: for about a week it felt like I was literally swallowing handfuls of broken glass. Thankfully that part is over! ⁣

It is so weird as my husband and son did not get it as bad as I did, especially the sore throat.⁣

I hope you are all well and experiencing a better start to 2023 than me!⁣

You gotta love finding a cauliflower that is bigger than your head! Cauliflower is such a versatile vegetable. This one is going into a smart pot with onions, celery, sweet potato, tomato, garlic, red lentils, split peas and some red curry and sumac. Cauliflower is a cruciferous vegetable, high in Vitamin C, folate, choline, antioxidants, phytonutrients & fibre - super healthy!⁣

On a more depressing note, I had a mishap more than a week ago where I somehow managed to get hung up with one foot and then the other while attempting to cross over a chain draped between two posts. I wound up whacking the back of my head and upper back, with bad bruising to both legs from the chain. ⁣

A reluctant trip to emergency and CT scan resulted in a diagnosis of concussion and, sadly, the end of my current training program. So frustrating, as I was really seeing progress! I guess the good news is that my bones are actually pretty resilient since I was not able to break my fall at all so it was a pretty hard impact. I credit hormones, weight training & a nutrient rich diet for my narrow escape.

Anyhow, I have to take it easy for a few weeks until the symptoms of headache, blurry vision, nausea and dizziness subside.⁣

I hope you are all doing better and enjoying the end of summer!⁣

Do you exercise with weights? It is truly one of the habits (along with training for flexibility & cardio) that helps us age well, as it preserves lean muscle and bone. ⁣I am happy to finally be back in the gym after more than 2 years. I find it motivating - since you’re there, what else is there to do?

I have been struggling with a bunch of health problems, including an autoimmune connective tissue disease, hypothyroidism, sleep apnea and a bout with both active Epstein-Barr (mono) and probably Covid at the start of 2020. As a result of chronic pain & exhaustion, I am usually in bed before some people have had dinner, so I have neglected this important aspect of fitness since the pandemic hit. I would like to 100% blame my sluggish thyroid for the extra pounds around my chest and middle, but I know it is also a result of my habits. It is frustrating to not be able to wear many of my clothes! It’s at the point where I need to either get a new wardrobe or tighten up my diet and include regular resistance training, not just walking a lot!

Even though I like going to the gym, not everyone feels that way. If you have never tried weight training, there are so many great free resources online! I would recommend an app called “The 7 Minute Workout” where you can find body weight exercises that require no equipment at all & can be done anywhere. Some rubber bands and maybe a set of dumbbells might be a good investment if you don’t want to join a gym.⁣ And make sure to start slow - you don’t want to get an injury!

⁣Want a dairy-free, sugar-free frozen treat? Ikea now has a plant-based strawberry cone! ⁣

It’s a bit tart and is sweetened with fruit, so not a bad choice if you are looking for something cold and creamy but not too sweet. The texture is similar to gelato. ⁣

Skip the cone if you want to avoid gluten.⁣

Do you have a favourite healthy restaurant in your area? Please share! I try to keep a list of places to go when traveling.⁣

Last night we returned from an overnight trip to the countryside. We enjoyed a hike through the woods, then touring .mill and finally hot/cold therapy ⁣

I am always looking for healthy food on the road, so I was delighted to find in Collingwood. I enjoyed a tasty and filling bowl with quinoa, tempeh, tomato, carrot, chickpeas, cauliflower, caramelized onions, pumpkin seeds and tahini dressing. They had a lot of vegan & organic choices including delicious looking desserts, plus a menu with smoothies, salads & sandwiches.⁣

I would have preferred the tempeh to be less salty and a bit more sauce on the dish, but other than those tiny quibbles, I would definitely recommend this place!⁣

It’s Taco Tuesday! Here is a healthy version using a delicious and easy to make cauliflower walnut chorizo. ⁣

It is important to use organic corn tortillas - blue corn is best if you can find it! ⁣

Soak 1/2 c. sundried tomatoes in hot water 20 min, drain and chop finely. Sauté a large onion and 2 cloves of garlic in 2 T. of olive then add 4 c. finely chopped cauliflower & a splash of tamari soy sauce plus the chopped sundried tomatoes and spices - 1/2 tsp. cumin, 1 T. chili powder, 1 tsp. sumac, 1 tsp. dried oregano, ground black pepper & hot red pepper flakes to your taste.

Put on a lid and cook until soft, then stir in 2 c. finely chopped walnuts. ⁣The nuts give it a ground beef texture.

Heat up your taco shell on a hot iron skillet, spoon on your “chorizo” & serve with chopped tomato, avocado, shredded romaine lettuce & a sprinkle of cheese (I used vegan cheese but if you prefer dairy the best choice is either raw or sheep or goat cheese). ⁣

Jennifer Aniston ate the same salad every day at lunch for ten years! That has to be an amazing salad, right? After googling the ingredients, I decided to come up with my own similar version that is gluten-free with extra nutrient dense veggies added. I could eat this every day too!⁣

In a large bowl, stir together the following chopped ingredients: 2 c. cooked quinoa, 2 c. cooked chickpeas (if canned, drain & rinse), 1/2 c. sweet onion, 1 T. dried oregano (rub it between your hands), 1/2 c. shelled pistachios, 1 grated carrot, 1 red pepper, 1 small tomato, 1 stalk celery, 1 english cucumber and 1 small block goat, sheep or vegan feta. ⁣

Then add the dressing: Juice of large lemon, 1/4 c. olive oil, 2 finely chopped garlic cloves, 1 tsp. dijon mustard, 1 T. maple syrup, 1 tsp. sea salt & some freshly ground pepper. Shake up in a jar and pour over other ingredients! Enjoy your lunch!⁣
