Veganurth Veganism is a lifestyle preserving the environment, sustaining health and compassion to all living beings Why the disconnection?

How can it be that 95% of Americans feel it is wrong to unnecessarily hurt and kill helpless animals, yet 95% of Americans continue to unnecessarily hurt and kill helpless animals—so they can eat them? The same people who treat—and love—their dogs and cats like members of the family, who buy them toys and treats and kiss them and cuddle them and do whatever they have to do, both practically and financially, to make sure their dogs and cats are happy and healthy, also sit down to a dinner of dead pig, cow, or chicken in the evening. Pigs are smarter than dogs (and at least as smart as three-year-old children). Cows and calves feel the same natural mother–child bond and affection as other animals. Chickens are intelligent and social creatures with a language all their own, in which they use more than twenty distinct calls to communicate with one another. There is no such thing as a good animal farm, any more than there can be a good and decent death camp. You cannot speak of "good" when the purpose of the place is killing. Truly man is the king of beasts, for his brutality exceeds theirs. We live by the death of others: we are burial places! I have from an early age abjured the use of meat, and the time will come when men such as I will look on the murder of animals as they now look on the murder of men. -Leonardo da Vinci

Vegans refrain from eating meat and dairy for ethical and spiritual reasons. We find common ground on this earth with all animals and the environment. Certainly if one embraces Veganism for their own personal health, they are by conscious just as violent towards animals and our planet as flesh eaters. Peace amongst mankind must include all animals and our planet, not just each other.....If you believe in God, you must trust that he loves all living beings, not just man........

Veganism is a philosophy and lifestyle whose adherents seek to exclude the use of animals for food, clothing, or any other purpose. Vegans endeavor not to use or consume animal products of any kind. The most common reasons for becoming a vegan are human health, ethical commitment or moral conviction concerning animal rights or welfare, the environment, and spiritual or religious concerns. Of particular concern to many vegans are the practices involved in factory farming and animal testing, and the intensive use of land and other resources for animal farming. Properly planned vegan diets are healthful and have been found to satisfy nutritional needs, and offer protection against heart disease, cancer, and other diseases. Various polls have reported vegans to be between 0.2% and 1.3% of the U.S. population, and ranging from 0.25% 0.4% to 2% of the UK population. History
The Vegan Society was founded in 1944 by Donald Watson and Elsie Shrigley in order to organize vegetarians who did not consume dairy or other animal products. The first vegan society in the United States was founded in California in 1948 by Dr. Catherine Nimmo and Rubin Abramowitz and was subsequently incorporated into the American Vegan Society after its founding in 1960 by Jay Dinshah. In 1984, a "breakaway" group from the Vegan Society, the Movement for Compassionate Living, was founded by former Vegan Society secretary Kathleen Jannaway to promote sustainable living and self-sufficiency in addition to veganism. Today, there are many vegan societies worldwide, including national societies in Australia, India, New Zealand, and South Africa. In 1993, the advocacy organization which would become Vegan Outreach was founded by Matt Ball and Jack Norris.

Hulled Barley is "a perfect food." Hulled Barley is powerfully high in fiber, protein, and niacin.

Hulled Barley can reduce cholesterol, provide intestinal protection, and aid with disease protection. Hulled Barley contains almost all vitamins, minerals like calcium, iron, magnesium & potassium, amino acids, and fiber that our body needs.

It is also a good source of Lysine, one of the essential ( it means must be obtained from food) amino acids. The fiber in barley is very effective in lowering cholesterol, also called a "cholesterol blocker".

Hulled barley possesses rich amounts of beta-glucan and niacin and also produces propionic acid within the body. Both these compounds help in lowering cholesterol.

Unfortunately, most barley sold is pearl barley. The valuable outer layer, loaded with fiber and nutrients, has been ground off. Pearl Barley is what white rice is to brown rice. Sadly, most people eat pearl barley instead of hulled barley.

The same goes for rice. The most popular rice in the world is white rice, which is worthless food. Pearl barley is also worthless food.

Make sure you buy hulled or hull-less barley. You can find it at reputable natural food stores. Bob's Red Mill stopped selling Hulled Barley. I asked them why. They told me that people were not buying it.

Pearl Barley takes a shorter amount of time to cook than Hulled Barley. People would rather sacrifice a few minutes of cooking time for nutrition and their well-being.

I only buy organic "hulled" barley, either red or tan in color. I make amazing barley soup. I include organic adzuki, mung, garbanzo, black, kidney beans and steam an array of healthy organic vegetables at the end.

I season it with turmeric, cumin, curry, paprika, chickpea miso and freshly squeezed lemon upon serving. I mix the hulled barley along with wheat berries, Forbidden Black Rice, Wehani Red Rice, green split peas and beans that I soak for twenty-four hours.

I rinse the beans and grains thoroughly and place them in a large pot with plenty of water. bring them to a boil and simmer for about forty minutes.

Halfway through simmering, I add quinoa, amaranth and red and black lentils. When the beans and grains are done, I turn off the heat and mix in the vegetables - usually carrots, celery, zucchini, kale, onion, and tomatoes. If you want to add potatoes, add them to the beans and grains while they are simmering for the last twenty minutes.

Serve with freshly squeezed lemon, chopped parsley, and an avocado... So delicious, I make enough for a couple of days. This is my medicine and prescription for pristine health and a beautiful life.

There is another side to hulled barley and that is the water. Drinking barley water is beneficial for digestive health. Barley water provides rich amounts of fiber to the body. Fiber adds bulk to our food and slows down its movement during the process of digestion. It thus helps in the better digestion of food and helps in maintaining intestinal health.

Barley water also creates a perfect heart condition and thus prevents any heart-related disorder, including seizures and attacks. So, it is very beneficial for heart health.

It is used in the treatment of arteriosclerosis, a condition where there is a thick plaque that builds up on the walls of the arteries. When you drink this water, it washes away any formation on the arteries and thereby gets rid of it. Barley water contains high amounts of magnesium; this mineral reacts with the enzymes in the body and helps control the level of glucose in the body. So, barley water can be used to control diabetes.

The magnesium present in barley water reacts with several different enzymes. Magnesium is also responsible for the glucose levels in the blood. Regular intake of barley helps to reduce the risk of the occurrence of diabetes.

Barley water is also beneficial to those suffering from gallstones and kidney stones. The fiber content in the water helps to prevent the formation of stones and also helps to cure existing ones; this is because the fiber content in the barley is water-soluble.

It has antioxidant properties and so helps to fight several diseases and prevent cancerous growth. Barley water also contains important phytonutrients known as lignans. These are antioxidants that are known to help fight and prevent cancer, in addition to promoting a healthy heart. This was proven in a Danish study published in the Journal of Nutrition.

Barley water will also help in cell growth and repair because it contains phosphorus and can also aid in healing tissue injuries in the body. For children suffering from asthma, barley water can be used as a cure. It is extremely effective and can also be used for immediate relief.

Barley is rich in a phytochemical called Lignans that provides protection against several heart diseases. Lignans get converted into enterolactone, which prevents the occurrence of breast cancer.

Barley water has folate, which is commonly called folic acid, a water-soluble vitamin that belongs to the B category of vitamins. This vitamin plays a significant role in the processing of the amino acid homocysteine. Folic acid is also essential for the proper growth and development of the fetus. Thus, pregnant women are advised to increase their intake of barley. It also contains good amounts of phosphorus and thus helps maintain bone health. Phosphorus helps process calcium and vitamin K so that our body gets a sufficient amount of these minerals for maintaining bone health.

Barley has enough of the daily copper requirement of the body. Copper improves the flexibility of blood vessels, thus allowing the free flow of blood. As mentioned before, barley is a fiber-rich food and fiber is not digestible by the human body, so it is therefore passed on through the colon.

In addition to providing bulk and decreasing the transit time of f***l matter, thus reducing the risk of colon cancer and hemorrhoids, barley's dietary fiber also provides food for the friendly bacteria in the large intestine." When the friendly bacteria in the intestines increase, food is digested better and more nutrients are provided to the rest of the body.

The benefits of barley and whole-grain foods have been researched and proven to reduce the incidence of postmenopausal breast cancer by 51% in women who had hormone replacement therapy. It is effective in reducing the incidence of other hormone-related cancers as well. Because it contains copper, barley can help those with arthritis.

As you can figure out, I love hulled barley. I drink barley water throughout the day, especially when I am fasting. I add just lemon to the water and sometimes ginger. You can feel the benefits of working immediately. Barley water is great for your skin as well and it may be my imagination, but I can't see any wrinkles that have to disappear.

Good health is so much more than just not eating meat and dairy, although refraining from meat and dairy is probably the most important choice you will ever make in your life, not only for your own life but for the lives of countless suffering animals as well as our planet.

Superior health is limiting your intake of food and only eating fresh organic fruits, vegetables, whole organic grains, and beans. Sprouted and cooked beans and grains are amazingly beneficial to your health and actually prevent and block cancer, heart disease, and diabetes. Grains and beans, along with vegetables and fruit, will maintain your perfect weight and give you the vibrancy and energy only accomplished by Veganism.

Grains like barley, buckwheat, wheat berries, spelt, rye and quinoa and beans like adzuki, mung, and garbanzo a natural medicines and are all you need for longevity. Along with organic fruits and vegetables, chances are that you will never contract cancer, heart disease, and diabetes.

These are the foods that heal, repair and nourish your body. They fight cancer cells and keep your arteries flowing with healthy blood throughout your body........

You can tell I really love hulled barley.....I make a great stew of red and brown whole organic barley along with organic garbanzo, mung, and adzuki beans.....I eat it all the time - I consider hulled barley the most important food I eat.

I am 78 years old and have never been to the doctor or taken as much as an aspirin in my life. I contribute to my great health by embracing veganism since I was fourteen years old. Living a quality life is not about longevity. Life is living free and independent of health issues, medications and physical restraints. Living is about waking up every morning with a purpose, vitality, happiness and a healthy body and mind...

The best time to become a plant-based purist vegan was in your earliest childhood. The smart time to embrace veganism is this very moment.

Thank you for being a part of my page. Please feel free to message me and ask me any questions you want. I love encouraging people to embrace a life of spiritual happiness and well-being. The benefits of veganism are not only health. You are contributing to a clean and vibrant planet, with compassion for all animals and humanitarianism to every human on the planet.

Veganism is a powerful ideology of moral justice. .. Doug

Forbidden Black rice only takes thirty minutes to cook and it is delicious. I add chopped tomatoes, onion, parsley, lemon and a whole avocado. Sometimes I will add lentils as well. This is a complete main meal.

Legend has it that in China, there was a special, heirloom variety of rice grown exclusively for the emperor. This variety of rice was the rice we know today as black rice or emperor’s rice. Black rice was cultivated in small amounts, in specially designated fields, by highly trusted servants and its seeds were guarded day and night. It was strictly forbidden for anyone, but the emperor, to consume this variety of rice.

The reason black rice was so highly valued and closely guarded by the Chinese emperors was that, in ancient Chinese medicine, which relies heavily on the philosophy “food is medicine and medicine is food,” black rice is seen as a main source of good health and longevity. In ancient days, black rice was viewed as the mystical source of the emperors’ good health and longevity and was consumed as a tonic.

Therefore, anyone caught cultivating or consuming this rice was believed to be sabotaging or “stealing” the source of good health and longevity reserved especially for the emperor and thus was punished severely.

Luckily, times have changed and no one will be punished today for consuming black rice. Though highly popular in Thailand and Indonesia, black rice is not a stable source of carbohydrates in most rice-consuming cultures, such as the Indian culture and the Arabic and Persian cultures.

That is mostly because the Greeks banned the cultivation, importation and consumption of black rice when they conquered the Middle East. After all, they believed that the consumption of this food helped their enemies in battle.

They did not, however, ban white rice, which they deemed worthless. As a result, India, one of the largest exporters of rice to the Middle East, both then and now, stopped cultivating of black rice due to a lack of demand. Therefore, white rice replaced black rice as the primary source of carbohydrates in all Middle Eastern culinary traditions. Due to events such as these, black rice, a food once highly revered by the world’s most powerful figures, faded into oblivion.

Though there is still a lot we do not know about the health benefits of black rice, a series of scientific studies have labeled it “The Long-Lost Superfood”, a treasure house of antioxidants, fiber, nutrients, minerals and amino acids capable of combating and preventing a host of health problems ranging from cancer, diabetes, and heart disease to Alzheimer’s. Apparently, the emperors of ancient China were right.

The black, outer layer of this rice contains antioxidant-rich bran. The purple and reddish pigment of this rice, which gives it its black appearance, contains Anthocyanins, the same antioxidants found in such prominent superfoods as blueberries, Acai berries and grapes...

The salad in the picture is a powerfully nutritional meal bursting with mango, peanuts, bell peppers, kidney beans, cilantro, green onions and lime... "Let your food be your medicine and your medicine be your food" ... Doug

Eating is a moral act that either creates or disrupts fragile relationships. These relationships link us to other people...
03/10/2025

Eating is a moral act that either creates or disrupts fragile relationships. These relationships link us to other people, animals, habitats and to our own sense of personal identity. We are connected by vast networks to the animals that we eat, to the land that nourishes those animals as well as the plants that nourish us, but most critically, we are connected to the people who grow, harvest, prepare, move and in many cases go without so we can eat what we want, when we want and in the ways that we want.

Buying organic foods or genetically modified foods or industrially-produced foods or local foods or foods from thousands of miles away has an impact on our existence as people, animals, our environment and the planet that we all share.

When we consider the origin of food, whether animals or plants, from a moral instrumental approach we begin to think beyond the notion that a cow is just beef waiting to be eaten, that an acre of land is just open space waiting to grow our food, that a farmer or farm laborer or retail store worker or chef is just a person providing something that we want.

We can now see these animals and plants and people as connections in our web of relationships and we can begin to apply moral reasoning to our food choices. The food that you put on your plate defines your values in all aspects of life from (1) compassion to animals as to how they are treated and how they meet their demise, (2) participating in saving millions of people in third world countries that helplessly and needlessly die as a repercussion of life-saving grains being diverted to animals to fatten them up for food to wealthy countries, (3) the eradication of millions of acres of land destroyed by animal agriculture farms and millions of more land, our water systems and the air we breathe polluted with the waste from the agricultural farms, and of course the aggressive over depletion of all of our natural resources, (4) and finally the epidemic of cancer, heart disease, diabetes and obesity that is destroying the lives of millions of people a year as a result as of the connection between all of above.

The economic, emotional and sustainable impact on our food from seed to harvest and birth to death, from the hands of migrate workers to the mouths of our children, from the agony and pain of a cow to the buns of a hamburger is so profound and has such an enormously philosophical impact on all of our lives that the entire planet and all its people, animals and plants reverberates every spin of the globe several million times a day.

While some of us get sick from too much food, some of us die from not enough. While billions of animals are sacrificed in terms of horror so unimaginably appalling that their dead carcass is devoured after one gives grace to God, it is hypocrisy beyond hypocrisy.

We must allow our conscious and our moral fiber to be our guide in the choices we make to define survival. We must take responsibility ethically and with great integrity as we choose to take from the planet as well as give back to the planet.

Most importantly and with a great deal of moral consciousness, we must consider the ramifications before we participate in taking a life and killing a passion and devouring that spiritual channel. We must be prepared for the consequences...

Veganism is a liberating step away from dependence on animal exploitation.

Embrace veganism as a verb, not a noun... Veganism is a lifestyle that thrusts me into activism for animal rights, humanitarianism, environmentalism, workers' rights, civil rights...

Veganism makes me feel kinder and closer to other beings. It is a tremendous relief to not support animal industries that cause so much groundwater pollution, runoff, erosion, and greenhouse gas emissions, all of which harm habitat and wild animals and take a devastating toll on human health.

Veganism implies holding out for something better than the hierarchy we are born into. Simply letting other living beings be, in all their diverse and wild glory, is its own justification.

Veganism is a metaphor for mankind to embrace each other impartially as one. Veganism is symbolic of preserving the natural resources of our planet.

Veganism symbolizes mankind's obligation to shield each other from racism, bigotry, authoritarianism, and violence. Veganism symbolizes peace, not war, love not hate, cultural unity not discrimination, socialism not fascism...

Tolerance is synonymous with Veganism. As Vegans, we recognize the spirit of camaraderie with mankind, animals and the environment. We are all connected, whether a cow, a whale, you, me, the rainforests, or the oceans. We are a concert for sustainability and survival...

Veganism empowers spiritual freedom that exists in every human and animal on the planet from birth to death...

Veganism is a humanitarian crusade - our core morality is most certainly engaged in defending the unwavering liberation of mankind's fragile sovereignty regardless of culture, race, religion, gender or sexual orientation.

As a vegan, I support banning semiautomatic assault rifles created for warfare -

As a vegan, I support the Environmental Protection Agency that ensures clean air and clean water, prevents childhood asthma, preserves biodiversity and combats climate change that could obstruct every life on the planet -

As a vegan, I support social aid programs like Head Start that provide basic education, health and nutrition for the most disadvantaged children and Planned Parenthood, which provides healthcare, pregnancy and testing services, LGBTQ services, family services, and contraceptive services to tens of millions of women and families -

We embrace humanitarian aid for all immigrants fleeing oppression, violence and hunger - we are adamantly opposed to white supremacy, Trumpism/MAGA, the GOP, racism and bigotry -

We demand open borders - no human being is illegal - diversity is our greatest asset... tear down the walls and build longer tables. Welcome immigrants, like our ancestors were embraced upon their entry to the borders of the United States of America.

Veganism is symbolic of unconditional reverence for all cultures, races, genders, trans-genders, sexual choices, religions and all living beings on land, in the sky and in the ocean

As vegans, we shield the dignity of animals' relentless survival liberties to exist in all the glory they merit no different than humans... "The fidelity of an animal is a precious gift demanding no less binding moral responsibilities than the friendship of a human being - the bond with an animal is as lasting as the ties with this earth as can ever be."

All life is sacred - NO species deserves to be characterized as dinner... Speciesism is as disingenuous as racism - The liberation of animals must apply to the same liberation of humans...

Animal agriculture is the biggest man-made contributor to climate change - a major dietary shift could prevent some of the worst projections scientists have made for the planet’s future. Animal-reliant global food systems are the single greatest factor behind biodiversity loss. And, of course, there’s the even more immediate issue of animal suffering.

Vegans like myself embrace socialism, liberalism, environmentalism, humanitarianism, feminism, agnosticism, culturalism, dietarianism and dozens more isms - I am a tempestuous 'evolutionary socialism' revolutionist - my armaments are carrots and Birkenstocks... my battlefield has no borders, cultural, racial, gender or generational solidarity - my bond is absolute planetary justice...

my core creed - 'treat others as you would have them treat you.' ... Doug

Creating a sense of purpose is the single most powerful contributing factor to your health and vitality.

Most people develop great regimes of nutrition, lifestyle activities and movement to support well-being, but without a clear sense of purpose in our lives, we struggle with physical health issues.

Those who reside in the Blue Zones that live well into their 90s and 100s have a powerful sense of purpose... Whether it be tending to their garden, taking care of grandchildren, painting a beautiful piece of art, challenging themselves to a mile more than they walked the day before, or writing a blog that they are insanely passionate about. Passion and sense of purpose go hand in hand, like beans and rice, sunsets and sunrises, Barack and Michelle. Passion and purpose make beautiful music together - they are a concert of your being. You can not have one without the other.

Japanese culture has a word that addresses this focus of passion and purpose... The word is 'ikigai' and translates simply as 'reason for being.' According to the Japanese, everyone has an ikigai. To find it often requires deep inquiry and lengthy search of oneself—a search which is highly regarded. Once you discover your ikigai, it's as if you've discovered the entrance to your own personal paradise. It is a gift and a blessing... One that you cannot wait to share with the entire world. Ikigai gives you the power of emotional and mindful freedom. You will experience a sense of liberation like no other time in your life. Ikigai is a revelation as powerful as a personal prophecy, as being born...

The term ikigai is composed of two Japanese words: iki, referring to life, and kai, which roughly means “the realization of what one expects and hopes for”. Unpacking the word and its associated symbol a bit further, ikigai is seen as the union of four primary elements:

What you love (your passion)
What the World Needs (your mission)
What are you Good at (your vocation)
What you can get paid for (your profession)

The word ikigai, that space in the middle of these four elements, is seen as the source of value or what makes one’s life truly worthwhile. In Okinawa, Japan, ikigai is thought of as “a reason to get up in the morning.” Interestingly, while certainly incorporating the financial aspects of life, the word is more often used to refer to the mental and spiritual state behind our circumstances as opposed to our current economic status alone. Even if we are going through a dark or challenging time, if we are moving with purpose, if we feel called toward something or have a clear goal in mind, we may still experience ikigai.

Often, the behaviors that make us feel ikigai are not the ones we are forced to take based on the expectations of the world around us, but rather, they are the natural actions and spontaneous responses that emerge from a deep and direct connection to life.

Many ancient indigenous cultures took time to honor the question of purpose through a traditional ceremony, vision quest and rites of passage to help reveal the essential role that each member was born to play in the greater tribe and story of life - though the space and reverence for this question do not always seem to exist today.

For many, our decisions around life-focus unfold in a more reactionary way, propelling us into educational, professional and life-directional paths based less on deep inner calling or soul-inspired vision, and more on societal expectations, so-called ‘practical reality’ and what is required to survive in the systems we’ve created to live in.

If there was ever a time on our planet where a sense of true purpose is needed, required, and desperately called for, now would be that time. But amidst the multi-layered pressures of our modern world, how do we peel back the layers and discover why we are here and what we are really supposed to be doing?

‘Follow your bliss.’ Find where it is, and don’t be afraid to follow it. Activism, on the other hand, to finding our purpose by following our heartbreak. Identify what is most deeply disturbing in our world and use this as an incentive to propel your actions and discover where you can make the greatest difference.

Don’t necessarily ask what the world needs. Ask what makes you come alive… Because what the world really needs is people who have come alive. Discover your purpose and fuse that with your passion. That is your ikikai - your reason for being who you are and your contribution to humanity.

Each of these viewpoints is powerfully compelling, whether you are following your bliss, following your heartbreak, or that which makes you come alive, or a combination of all three! My ikikai is what I am doing on this page. I love to share my passion and my purpose, which is veganism. I define veganism as a compassionate, environmental, healthy and humanitarian purpose in life.

As the world moves through massive change on many levels, more and more people are feeling called to align their skills and gifts with a higher cause or sense of contribution. Beautiful examples are emerging in many stages of social change and activism where people are not abandoning their passion for the cause but rather channeling the thing they most love doing in the direction of positive change – and discovering inspired ways to support themselves along the way.

Today's challenges are far greater in perspective to veganism than they were a decade ago. People are so concerned about whether their fruits and vegetables are organic. It is so much more complex. I am more concerned if my fruits and vegetables are harvested by farmers who pay their farmhands fair wages, give them health insurance, paid sick leave and ensure that the environment they are working in is safe. I am concerned if the people that I buy my produce from are kind and environmentalists and community activists. I went to make sure that they do not pollute the soil, the water and the air around their farm. I want to make sure that no animals were displaced or harmed in the process of growing their fruits and vegetables.

Take a moment to draw your own version of the overlapping circles of ikigai and consider what gives you extreme satisfaction to share your purpose, your moral values and your deepest sense of being whole. Once you discover your ikikai, you will discover who you are and why you are on this planet. We all have a purpose.

My favorite quote is "those that danced were thought quite insane by those that could not hear the music." Whether your purpose is veganism or civil rights or environmentalism or humanitarianism or writing, art, music, your family or your religion or relishing the first-day break in the morning - make your purpose your dance and open up the minds of everyone around you to hear your music...

No one purpose is nobler or important or meaningful than another... Teach and apply your purpose and passion in life... But more importantly, listen and learn others' purpose and passion in life.

Be safe, healthy and compassionate... Doug

29/09/2025

Celery is highly nutritious and one of the most hydrating foods we can put in our bodies. Because it is incredibly alkalizing, it equalizes the body's PH, which is vital for peak health. In ancient times, it was considered a medicinal herb used to treat a variety of health complaints. The minerals and vitamins and nutrients are in perfect harmony with each other. Celery leaves are high in vitamin A, whilst the stems are an excellent source of vitamins B1, B2, B6 and C and rich in potassium, folic acid, calcium, magnesium, iron, phosphorus, sodium and essential amino acids.

This superfood also contains important concentrations of plant hormones and the very special essential oils that give celery its characteristic smell. These oils help to regulate the nervous system and are very calming.

Celery is rich in sodium, which is very different to table salt. Normal table salt is composed of insoluble inorganic compounds, which lead to the development of varicose veins, hardening of the arteries and other ailments. If salt, including sea salt, is white, then it has been processed and all minerals and nutrients have been destroyed.

On the other hand, the sodium that is available in celery is soluble and organic (live) and is essential for the body. Organic salt allows the body to use the other nutrients that are taken into the body. Every cell in our body is constantly bathed in a salt solution, and if the salt level is not in balance, dehydration occurs. This is why celery is the perfect rehydration for athletes.

Other Benefits of Celery

Fights Cancer - Celery is known to contain at least eight families of anti-cancer compounds. A study at the Rutgers University of New Jersey found that celery contains a number of compounds that help prevent cancer cells from spreading. Celery contains compounds called acetylene and this compound has been shown to stop the growth of tumor cells. Celery contains other compounds called phenolic acids that block the action of hormone-like substances called prostaglandins, which encourage the growth of tumor cells. Coumarins, another phytonutrient in celery helps prevent free radicals from damaging cells and prevent the formation and development of colon and stomach cancers.

Lowers Cholesterol - Laboratory studies also indicate that butylphthalide, a chemical in celery, may help reduce LDL (bad) cholesterol. According to researchers at the University of Chicago, celery reduces cholesterol levels by as much as 7 points with as little as 2 stalks a day. Celery also aids in increasing bile acid secretion which helps to remove cholesterol from the body.

Aids in Digestion - Special nutrients in the fiber are released that aid bowel movement. This makes celery a natural laxative that helps to relieve constipation. It also helps relax nerves that have been overworked by man-made laxatives.

Diuretic - The potassium and sodium in celery are powerful body fluid regulators that stimulate urine production to help rid the body of excess fluid.

Anti-Inflammatory - The polyacetylene in celery is an amazing relief for all inflammation including rheumatoid arthritis, osteoarthritis, gout, asthma, and bronchitis. A study published in the Proceeding of the National Academy of Science U.S.A found that another powerful phytonutrient called luteolin prevents activation of a pathway that allows inflammation in the brain to get switched on. Luteolin also inhibits the excess production of TNF-alpha, a direct cause of inflammation.

Lower blood pressure - Celery's potential for reducing high blood pressure has long been recognized by Chinese medicine. Studies show that eating celery every day for 1 week can significantly help lower blood pressure. A compound called phthalides helps relax the muscles around the arteries, dilating the vessels and allowing blood to flow smoothly. Phthalides also reduce stress hormones that cause blood vessels to constrict. When researchers injected 3-n-butyl phthalide derived from celery into laboratory animals, the animals' blood pressure dropped 12 to 14 percent.

Insomnia - The minerals and essential oils in celery have a calming effect on the nervous system, making it beneficial for insomniacs. Its high magnesium levels help people to relax into a soothing and restful sleep.

Weight loss - Eating celery frequently throughout the day helps curb cravings for sweets. It is filling without putting any extra pounds on.

Elimination and prevention of stones - Celery is an amazing eliminator of toxins from the body, which aids in the breaking and elimination of urinary and gall bladder stones. Celery helps those who have suffered from stones from getting them again.

Increased Sexuality - Celery is beneficial for weak sexuality, yet it doesn't cause an uncontrollable urge as some pharmaceutical drugs do. Celery balances the system rather than increasing it.

One of my favorite meals is chickpea miso, celery, onion, purple yam, cauliflower, and Maitake mushrooms... I fill a pot with 3/4 of water and a heaping tablespoon of white chickpea miso... I warm it, make sure not to boil miso, then I put in onion, celery, cauliflower, and purple yam... I let the soup heat up to almost a simmer... Then I just turn off the heat and allow the vegetables to steam in the miso until the yams are tender. I add a whole lemon upon serving... The broth is as healthy as the vegetables... Doug
