One of my favorite squash is Red Kuri Squash!!

So today I chopped one of them and steamed on my stove top. It took about 25-30 minutes!! This is how I enjoy to eat them, you can certainly roast them in the oven.

They have the consistency and texture of a Kabocha squash which I love as well….lol! In fact, I love most of the squashes, who am I kidding!

My Story

I’m extremely passionate about a plant based diet as I have seen first hand what it has done for my own health as well as others. I have received my certification from Dr. Mc Dougall’s Starch Solution Program. My focus now is to help you achieve and thrive on a Plant-Based diet while teaching you culinary techniques on how to prepare meals using fresh, whole foods that are salt, oil and sugar free. It is simply healthy cooking made delicious and easy without compromising flavor. I have lost over 115 lbs. and I no longer take any medications. I have been thriving on a plant based diet now for over 6 years and have more energy now than ever before. It has become a lifestyle. I now do private coaching as well as cooking classes once a month. Freedom has never tasted so good.
