Quick, simple and satisfying - a blessing for busy days. Sesame Soba Noodles

This simple sesame noodle recipe is fabulous eaten warm or slightly chilled on a hot summer day. Use soba or udon noodles, whichever you prefer. I use tahini - sesame seed paste - to add body to the sauce which is traditionally made with peanut butter. Overall the recipe nourishes Kidney Jing, Yin and Blood - it's beneficial for helping to regulate the thyroid and endocrine system.

8 oz soba (buckwheat noodles) or Udon noodles
1 clove garlic minced
1/2 cup tahini (sesame seed paste)
2 Tbsp peanut butter or other nut butter
3 Tbsp tamari soy sauce
2 Tbsp maple syrup
3 Tbsp ume plum or rice wine vinegar
1/2 -1 cup bancha or kukicha (roasted twig) tea. Or use a bit of the noodle cooking water.
1 tsp chili oil
scallions
black or white sesame seeds
1 1 inch piece nori trimmed

Instructions
Cook noodles according to package. Drain and quickly rinse with cold water to stop their cooking.
While pasta is cooking, prepare the sauce. In a medium bowl using a wooden spoon combine garlic, peanut butter, tamari, maple syrup and vinegar. Mix in tea about 1/4 cup at a time. The sauce will thicken, continue adding in tea until it thins out so that you can pour it. Pour sauce over noodles and gently combine with wooden spoon until noodles are well covered. Serve garnished with sliced scallions, sesame seeds, chili oil and a few slices of nori.

Long Covid, Epstein Barr, Mono, and Shingles are a few examples of post viral syndromes. Through the lens of Chinese medicine (CM), these are attacks from exterior patterns that become logged half in and half out of the body. Some people may be constantly dealing with lingering symptoms and compromised immunity, and frequent flare-ups. In others, the pattern may lay latent for years before being triggered to resurface. Called Xiao Yang patterns, CM has been addressing them for centuries. They are a bit icky, sticky, stubborn and tricky — but I assure you — they can be addressed.

My focus with this course is to provide you with some foundational knowledge on how to identify your patterns, and how to clear flare-ups or chronic symptoms and how to bolster after flare ups to reduce severity and frequency of these patterns.

We will use COVID as the most recent example of virus (toxic wind and heat) pattern that is most easily relatable pattern.

Let’s build a tool kit. We will cover herbs, foods and recommendations to help you prevent infection or reinfection, steps to take for immediate treatment and shortening the severity and length of COVID, how to clear and rebuild after an infection, and how they can vary from person to person.

Ellie and Diego are pleased with how much cat nip is in the yard and garden -- and our winter has been most of my herbs aren't slumbering, rather they are growing. It's quite alarming, actually. Anyway, back to catnip.

They get the zoomies, crash and cuddle, and it aids their digestion. However, I don't grow nip just for the cats.

Blessed catnip is a member of the mint family, which is a massive group. It's an ally for us in many ways and one of the first herbs to appear in the spring.

Catnip, like other mints moves Liver Qi stagnation.

It's great at calming nerves, easing tension, and anxiety. It can be very helpful in the treatment of acid reflux, GERD, gas and bloating, epigastric and flank pain and bloating, which is often caused by Liver Yang Rising. There's too much knotted energy and heat moving up and keeping the Stomach's Qi from descending.
Erp...verp, hiccup...it's also called Rebellious Qi.

Catnip tea is fantastic for colicky babies. Yes, really. During WWII, British nurses used it when standard western medicine wasn't available. I've worked with it for years with great success -- benefiting Mom and baby.

Like all the other mints - catnip is helps fight off colds, flus, allergies and viruses. It's a barrier or fortress plant in the garden too, helping to keep away pesky ants and mosquitoes. It's used in borders, takes up space quickly, requires little care and comes back every year. It's easy to harvest and dry for storage and use during the winter. If it dies all the way back during the winter, it will be one of the first things to wake up in your garden.

Walnuts are likely the oldest tree foods we've been eating. Dating back to 7000 BCE to an era called 'Pecan Pie World' (pecans are a part of the walnut family), walnuts were one of the first trees to appear as the Earth thawed from one of its great freezes.

They are tenacious trees and grow easily. But they've fallen out of favor with many because folks don't want to be bothered with their heavy, pungent smelling outer husk or with how difficult they can be to shell. We've opted to eat more the 'sexier' nuts like almonds and pistachios.

I'm a firm believer we should eat more walnuts -- but I grew up on a farm where there were walnut trees -- Grandpa Herman loved walnuts.

There are two main species. Black walnuts, which are smaller and little more bitter than the English walnut which has a larger, sweeter, white meat.
Like other nuts, walnuts have a significant ability to lower blood cholesterol. Unlike other nuts, however, walnuts are high in arginine, which allows the blood vessels to relax. They also possess ellagic acid, a cancer fighting antioxidant.

I am an AOBTA certified instructor and practitioner of Asian Bodywork (Amma Therapy). I have been practicing and teaching Asian medicine in form of Traditional and Contemporary Chinese medicine and holistic nutrition since 1993. I place my emphasis on helping clients and students understand their core health patterns and help them learn to apply lifestyle principles to maintain health or treat specific disharmonies.
