Haven’t filmed myself in ages, but might dust off the cobwebs to do a new series of videos! I’ll test out the exercise trends to let you know whether they are worth trying or are just embarrassing and a waste of time.👍🏻

Meal prep with me to feed Brooks for a week!

Veggies introduced: green beans & carrots
Fruit introduced: bananas & blueberries
Allergen of the week: eggs

I chose to make my own baby food for a number of reasons, but cost and quality were my top 2! This took me about 2 hours to do it all and because of the baby Béaba, I was able to do it simultaneously with our own weekly meal prep! For dinner we give him Serenity Kids pouches because I like their variety, simple ingredients, and he gets his animal proteins!

‼️ AFFORDABLE SUNDAY MEAL PREP‼️

This recipe is so good, and you can’t beat the macros or the price for 12 servings! You could definitely even cut it down a little more and still have a filling meal because these are some big portions 😅

🍝 RECIPE:
• 4lbs ground turkey
• 4 boxes of Banza pasta (we used cavatappi)
• 6 small zucchini or 3, large quartered
• 1 sweet onion, diced
• 3 jars of tomato & basil pasta sauce
• 16 oz low fat cottage cheese
• 12 oz mozzarella cheese, shredded (use a block to avoid unwanted added ingredients!)
• salt, pepper, and Italian seasoning

DIRECTIONS:
1. Cook pasta to al dente and set aside
2. Cook down onion and turkey in 2tbsp olive oil. Strain any excess liquid
3. Add in zucchini, season everything with salt and pepper and partially cook down.
4. Add 1 1/2 jars of pasta sauce to the pasta and the other 1 1/2 jars to the turkey skillet
5. In a large bowl, mix together cottage cheese, 8oz of mozzarella cheese, salt & pepper to taste, 2 tbsp Italian seasoning.
6. TIME TO LAYER!
• line the bottom of your pan (we used 2 large casserole dishes) with 1/2 of the pasta
• top the pasta with 1/2 of the turkey mixture
• layer on your cottage cheese blend
• add the rest of the pasta and turkey
• sprinkle the remaining 4 oz of mozzarella cheese on top
7. Bake at 375° for 20 minutes and portion out among containers!

*this recipe could easily be cut in half for a smaller meal prep!😃
