As promised the recipe for the fabulous toddler approved peach cobbler! Super fast and super easy!

Ingredients:
1 GF yellow cake mix
1 large can sliced peaches I. Heavy syrup
1 stick of butter cut in 12 slices

Pre heat oven 350 degrees
Pour peaches into bottom of ungreased cake pan (I used 13x 9 but I’ll use an 8x8 next time for a thicker one). Spread dry cake mix over the top of peaches and place butter slices evenly on top. Place in oven for 35-45 mins should be nice and golden brown.

I find this pillsbury cake mix to be very good one.

But I LOVE how this turned out!

I love Pinterest but the easy make dinners usually consist of a ready made soup our dip mix that adds the flavoring. For you GF’ers our there you know how hard it can be to find those mixes that are gluten free. For dinner I was wanting to try this easy make Mississippi pot roast and it calls for two different mix packages, ranch and onion soup mix. Here is what I found and BTW, OMG 😲 was it delicious! Next time I have to make sure and buy a bigger roast so I have plenty of left overs

The recipe:

3-5 lb chuck roast
1 pkg onion soup mix
1 pkg ranch dip mix
1 stick butter (1/2 cup)
8-10 Pepperoncini

Place liner in the crock pot (not required but oh how they make my life easier)
Place roast in bottom
Add both mix packages on top. Cube butter and place on top of the mix powder and place the pepperoncini’s on top. Put lid on and cook on high 6-8 hours.

We served ours with mashed potatoes and green beans! So delicious!

Today I had my granddaughter over and she wanted to make cookies.... heck my sweet tooth said I wanted to as well! My choice was to suffer through the no licking of the spoon or fingers to make regular cookies or figure out a way to make cookies gluten free but ones she would enjoy as well. Enter stage left Gluten Free “Nutter Butters”. They were super easy to make and we really did enjoy them!

Here is the recipe

FOR THE COOKIES
1 cup sugar
1 cup peanut butter
1 egg
FOR THE FILLING
1/4 cup butter room temperature
1/4 cup peanut butter room temperature
1 cup powdered sugar
1-2 tablespoons milk

Instructions
Preheat the oven to 350 degrees.
Stir the cookie ingredients together until smooth. Scoop out 1 inch balls of cookie dough onto a parchment lined baking sheet. Press down with the back of a fork and then press again from the opposite direction, to make the criss-cross pattern on top of each cookie.
To make the cookie dough into the shape of a Nutter Butter cookie, form the cookie dough ball into a log shape.
Roll the cookie dough in sugar (optional).
Press down with the back of a fork and then press again from the opposite direction, to make the criss-cross pattern on top of each cookie. Finish by pinching in both sides of each cookie before baking.
Bake for 12 minutes and then let cool on the tray for 1-2 more minutes.
For the filling: beat the butter and peanut butter in a big bowl with a hand mixer together until smooth.
Slowly add in your powdered sugar and beat until smooth.
Add the milk, one tablespoon at a time until the desired consistency is reached.
Spread a tablespoon of the filling onto the bottom side of one of the cookies and then top with another cookie to create a cookie sandwich…a nutter butter sandwich!
