It is possible to eat real food, real healthy, real easy each day. Every weekend we will post Ethan's menu for the week to give you some tips. We hope this page assists parents in ensuring their kids develop and achieve optimal health through diet.

This is what we are having for supper, per Ayden's request. Slight changes include gluten-free lasagna noodles and only grass-fed hamburger, in Italian sausage. This is our first try at lasagna in over 7 years. Wish me luck! ;)

Love this veggie lodge gingerbread house alternative shared by Green Giant. Here are the instructions and information from the site:
Here is what we used to make our veggie lodge:

Six 8"- carrot logs (One for front, five for back)
Eight 5"- carrot logs (sides of lodge)
Eight 3"- carrot logs (front)
Eight 1 1/4" - short spacer logs (by front door)
Four 1 1/2" - carrot logs (to create side window opening)
Three 7" -carrot log rafters

Sixteen 6" - 7" long stalks of celery (for roof)

The foam core board gable ends measure 8"x 6" x 6"
The foam core board floor/base measures 8" x 5" (plus extra on the back for chimney if desired)

The window is made out of a slice of turnip.

Use toothpicks if necessary, in addition to cream cheese mortar to fasten cucumbers and celery.
Use bamboo skewers for stacking chimney mushroom "stones."

This was our lunch today. Homemade pizza on flatbread with cheese, tomato/red pepper sauce and turkey pepperoni, a tangerine, tomatoes, carrots, and a celery stick. It was quick, easy, and enjoyed by all.

Ethan just taught me that cinnamon comes from an evergreen-like tree from the Laurel family. They scrape the tree's bark in the rainy season and when it dries out, it curls up into sticks. No wonder they call it cinnamon BARK! Am I the only one who didn't know this?

Our family is doing primarily medical food shakes for today and the next 2. So, for lunch today the kids had a nutrient packed shake as well as grapes, a tangerine, a grass-fed beef stick, and cucumbers. Ethan didn't "love" the shake, but the other 2 kids did. We ended up racing to see who could finish first. (More fun that way!) :)

Apple/Cinnamon Oatmeal

I've been seeing different recipes floating around for slow cooked oatmeal, so I decided to mix up a few and this is what I came up with.

All ingredients are organic:

2 peeled and cubed apples
2 cups oats
1/8 cup brown sugar
1/2 tsp vanilla
1/2 tsp cinnamon
2 cups water

I put these ingredients in this order into my crockpot last night and cooked them on low til this morning.

It was a great smell to wake up to and all members of this Sefcik family loved it!

I served the bowls with a splash of milk. Next time, I will skip the brown sugar and just add agave when it's time to eat. Maybe some walnuts for a nice crunch too... :)

We successfully finished our first day of the Sefcik Schoolhouse! :) We included Tabata exercises and stretches throughout for some exercise, bottles of water on their desks to encourage drinking, snack break for some almonds, and diffused some therapeutic-grade peppermint essential oils near their study area to promote a great learning environment. We will see where this journey takes us, but the first day was great! :)
