Keto Ham, Cheddar and Jalapeno Bites
Ingredients:
1 1/2 cup chopped ham
3 ounces cream cheese, softened
1/4 cup jalapeño, seeded and chopped
1 1/2 cup shredded cheddar
3 eggs, beaten
3/4 cup almond flour
1/2 teaspoon baking powder
Instructions:
Preheat the oven to 350 degrees F.
Combine the chopped ham and cream cheese until completely combined.
Stir in the shredded cheese, chopped jalapeño, eggs, almond flour and baking powder until a thick dough forms.
Chill the dough 15 minutes.
Use a 1 inch cookie scoop to portion the bites out. Drop onto a silicone lined baking sheet and bake 15-18 min until golden brown and cooked through.

Keto Beef Stroganoff
This easy keto beef stroganoff combines thinly sliced ribeye, and tender mushrooms and onions in a rich cream sauce!
What You Need:
Cast Iron Skillet
Ingredients:
▢ 1 lb boneless ribeye steak, sliced
▢ 1/2 tsp pink salt (for seasoning steak)
▢ 1/4 tsp black pepper (for seasoning steak)
▢ 2 tbsp avocado oil
▢ 3 tbsp butter
▢ 1/2 medium onion, sliced
▢ 8 oz cremini mushrooms, sliced
▢ 1 cup beef broth
▢ 1/2 cup sour cream
Instructions:
Heat a 1 tbsp oil in a large skillet over medium-high heat.
Season the sliced steak with salt and pepper and place it in the hot skillet, searing on all sides for 1 minute until browned. Sear in batches if necessary/skillet is not big enough to hold all the meat in an even layer.
Transfer the seared steak to a bowl and set aside.
Reduce the heat to medium and add the butter. Once melted, add the sliced onion, cooking for 1 minute before adding the sliced mushrooms. Add a pinch of salt and saute for 8-10 minutes, stirring occasionally, until all moisture has been released from the mushrooms and onions are soft and golden.
Add beef broth and scrape up any browned bits from the bottom of the pan.
Once the broth has thickened slightly, mix a few tablespoons of hot broth with sour cream in a separate small bowl. Add the mixture to the broth and vegetables and stir to incorporate.
Taste and season as necessary. Continue to cook and allow the broth to thicken, then add the steak back to the skillet and simmer until warmed and fully cooked through, about 4-5 minutes.
Serve over blanched zoodles or steamed cauliflower rice and garnish with chopped parsley and freshly cracked black pepper, if desired.
Serve immediately and enjoy!
Best stored in an air tight container in the fridge up to 5 days.

All you need is 3 ingredients and less than five minutes to make some incredible Keto Cheesecake Fluff!
Ingredients:
▢ 8 oz cream cheese
▢ 8 oz heavy cream
▢ ½ cup powdered erythritol
Instructions:
Whip the heavy cream until stiff peaks form. Transfer to a separate bowl.
Whip the cream cheese and sweetener until light and fluffy. Add ⅓ of the whipped cream and mix well.
Slowly fold in the remaining whipped cream. Spoon or pipe into small serving bowls.

CACAO HEAVEN SMOOTHIE
INGREDIENTS:
1 banana
1 avocado
2 tbsp. of cacao powder
1 tbsp. of cacao nibs
2- 3 cacao beans
2-3 large date or 2 tsp. of date syrup or 1 tbsp. of raw honey
Plant-based milk or coconut water
Optional:
1 tbsp. of goji berries
1 tsp.of raw maca

Broccoli Cheese Balls
Broccoli Cheese Balls are crispy on the outside with 3 kinds of gooey melted cheese and fresh broccoli on the inside. Make a great appetizer!
Ingredients
▢ 1 1/2 heaping cups fresh broccoli florets
▢ 1 cup shredded Colby cheese
▢ 1 cup shredded cheddar cheese
▢ 4 ounces Velveeta, cut into small chunks
▢ 1/2 teaspoon crushed red pepper flakes
▢ 2 1/4 cups Panko crumbs, divided
▢ 1 egg, lightly beaten
▢ 1/2 cup all-purpose flour
▢ 2 eggs, lightly beaten
▢ Vegetable or Canola oil
Instructions:
Steam broccoli until slightly softened. Let cool.
Finely chop broccoli. You want the pieces to be 1/4-inch or less. Place in a large bowl.
Add cheese, red pepper flakes, 1/4 cup Panko crumbs, and 1 egg to bowl with broccoli. Stir well.
Use your hands to shape mixture into balls using about a rounded tablespoon for each ball. You should get 12-14.
Place balls on a plate and refrigerate for at least 30 minutes.
Place flour in a bowl.
Place the 2 lightly beaten eggs in a second bowl and mix in 1 tablespoon water.
Place remaining 2 cups Panko crumbs in a third bowl.
Pour about 2 inches of oil in a Dutch oven or heavy pot. Heat oil to 375 degrees. For best results use a thermometer.
Remove broccoli balls from refrigerator, coat in flour, dip in egg mixture, and then coat in Panko crumbs.
Fry about 4 balls at a time cooking until golden brown on all sides.
Drain on a paper towel-lined plate.

Zucchini Pizza Bites
Zucchini Pizza Bites are one of our favorite snacks! These delicious pizza bites are topped with our favorite toppings and plenty of cheese for the perfect low carb pizza fix!
Ingredients:
2 large zucchini
½ cup low carb pizza or tomato sauce
1 teaspoon oregano
2 cups mozzarella cheese
¼ cup parmesan cheese
pizza toppings as desired
Instructions:
Preheat oven to 450°F. Line a baking pan with foil and set aside.
Slice Zucchini ¼" thick and arrange on prepared baking sheet.
Top zucchini slices with pizza sauce, oregano, cheese and your favorite pizza toppings.

Paleo & Keto Strawberry Spinach Salad
This paleo and keto strawberry spinach salad is incredibly fresh, nutritious, simple and scrumptious!
INGREDIENTS:
For the dressing:
60 ml extra virgin olive oil
2 tablespoons red wine vinegar or balsamic vinegar
1-2 tablespoons Lakanto syrup or maple syrup if paleo*
1 tablespoon shallot or onion, very finely minced
1/4 teaspoon kosher salt
freshly ground pepper to taste
For the salad:
200 g baby spinach
200 g strawberries sliced
3 tablespoons basil leaves ribonned
60 g pecans or walnuts lightly toasted and roughly chopped
40 g feta or goat cheese optional
INSTRUCTIONS:
Combine all the ingredients for the dressing in a small bowl. Set aside.
Toss together in a salad or mixing bowl the baby spinach, strawberries, pecans and goat cheese (optional). Top with the dressing right before serving.

KETO CHICKEN ALFREDO WITH BROCCOLI BAKE
Ingredients:
3 tbsp butter, divided
2.5 lbs boneless skinless chicken breast, sliced
1/2 tsp salt
1/4 tsp pepper
2 tbsp chicken broth
12 oz steam bag of frozen broccoli
3 garlic cloves, minced
1 oz cream cheese, softened
1 cup heavy whipping cream
1/2 tsp Italian seasoning
2/3 cup parmesan cheese, grated
1/4 cup pepper jack cheese, grated
3/4 cup mozzarella cheese, grated
1/4 tsp basil
Instructions:
Melt 1 tbsp butter in a 10.25 oven-safe skillet. (I use a cast-iron skillet)
Season sliced chicken with salt & pepper before placing the chicken in the skillet. Sear on both sides.
Cover the skillet with a lid and simmer on low until the chicken is no longer pink.
Remove chicken from the skillet and set aside.
Deglaze the pan by pouring 2 tbsp chicken broth into the hot skillet then scraping the bits off the bottom with a wooden spoon. Leave the bits in the pan as they are extra flavorful.
Pop the broccoli in the microwave and follow package directions to steam. Or, if you prefer, you can steam in boiling water on the stove.
While the broccoli is cooking, add 2 tbsp butter to the skillet along with the minced garlic. Saute 2 minutes or until fragrant.
Add softened cream cheese, heavy whipping cream, and Italian seasoning to the minced garlic, then stir continuously with a whisk on medium heat until the ingredients are thoroughly combined.
Reduce to a medium/low heat and allow the sauce to simmer gently boiling until the heavy whipping cream has reduced and thickened. Keep whisking so that it doesn't stick to the bottom of the pan. It will take a few minutes for the sauce to reduce and thicken.
Once it has thickened, add the parmesan and pepper jack cheese then continue to stir until the cheeses melt and the sauce is smooth.
Drain steamed broccoli.
Add the chicken and broccoli to keto alfredo sauce and stir until thoroughly combined.
Sprinkle mozzarella cheese on the low carb chicken alfredo broccoli mixture then sprinkle basil on top.
Pop the skillet in the oven on the top rack under broiler for 1-2 minutes or until the mozzarella cheese begins to bubble. While you could leave it on the stove to melt, I found that baking the cheese from the top in the oven produced the best results for this dish.

MINI NO-BAKE BLACKBERRY LEMON CHEESECAKES
INGREDIENTS
FOR THE CRUST:
3/4 cup graham cracker crumbs
1 tablespoon sugar
3 tablespoons melted butter
FOR THE CHEESECAKE FILLING:
1 (8 ounce) package cream cheese, softened
1 teaspoon lemon juice
3/4 cup sugar, divided
2 cups heavy cream
FOR THE BLACKBERRY TOPPING:
8-10 ounces fresh blackberries
2 tablespoons lemon curd
1 teaspoon lemon zest
Fresh mint, for garnish (optional)
INSTRUCTIONS:
In a medium bowl, stir together the ingredients for the crust. Place about one tablespoon of the crust mixture into the bottoms of 12 small dessert dishes or jars. Press the crumbs lightly into the bottoms of the dishes.
Prepare the filling by beating the cream cheese, lemon juice and ½ cup of the sugar with an electric mixer on high speed until fluffy. In a separate bowl, beat the heavy cream and 1/4 cup sugar on high speed until stiff peaks form. Fold the whipped cream into the cream cheese mixture.
Spoon or pipe the cheesecake filling into the dessert dishes, filling about ¾ full. Refrigerate.
In a small bowl, gently mash the blackberries, leaving some larger pieces. Stir in the lemon curd and lemon zest. Just before serving, spoon the blackberry filling over the cheesecakes. Garnish with fresh mint, if desired.
