Uncle Goat, featured in Netflix’s Street Food Chiayi episode, is an absolutely legendary character. Not only is his passion and determination for continuing a difficult, 1500-year-old culinary cultural heritage admirable, but he’s also a kind, charismatic, and unconventional man who puts extreme effort into everything he does. Getting to know Uncle Goat, over innumerable pots of delicious Alishan tea, has been as personally rewarding as it has been incredibly informative. He has a wealth of knowledge in so many fields and he fully understands the process that he undertakes in cooking his 3 Day 3 Night Goat Stew. To continue this cooking tradition from the 6th century Sui dynasty, however, not only takes knowledge of the intricate process, but also requires intense grit and great physical stress, which he has endured for the several decades his restaurant has been open. Needless to say, I’m a huge fan of Uncle Goat, not only as a friend, but also as an admirer of his incredible work and all that he represents.
