Simply blend together:

1 16-oz package silken tofu
1 scoop protein powder (or your favorite)
2 tablespoons cocoa powder (or skip for vanilla flavor)
1 teaspoon vanilla extract
Pinch of salt
1-2 soft dates, optional

Add some peanut butter and maple syrup if you want it sweeter or higher calorie. Serve over a sliced banana or berries.

That 70% statistic really surprised me! We were snacking on baby carrots during homeschool the other day, and decided to research them. We learned that they are often on the store shelves within a day of being picked. 🥕 Do you buy baby carrots, or chop your own? I do a little of both!

Also, a beauty tip for you: a whole carrot a day gives your skin a beautiful glow! Not only will you have a glowing skin tone from the beta carotene, but it also actually promotes cell turnover and reduces inflammation.

So Easy Black Bean Soup by Rose Esselstyn

Ingredients:

1 small onion diced

5 oz. sliced mushrooms

3-5 medium carrots, thinly chopped

3 stalks of celery, chopped

3 15-ounce cans of black beans, drained and rinsed

2 cups low sodium veggie broth, or water

1 16-ounce jar of salsa

½ teaspoon cumin

½ teaspoon chili powder

1-2 teaspoon jalapeños, finely chopped (if that’s your jam!)

2 cups of your favorite green (chopped kale, frozen or fresh spinach), optional

Instructions:

To a medium pot over medium heat, add the onion, mushroom, carrots and celery and stir. If needed, add a dash of water to the pan in order to avoid sticking.

Add the beans, salsa, and veggie broth to the pot and bring to a simmer.

Once the ingredients are well mixed and warm, transfer about 1/3 of the soup to a blender or food processor and blend until smooth (alternatively, use an immersion blender and blend roughly 1/3 of the soup to a smooth texture).

Pour the blended soup back into the pot.

Optional - add a chopped green like kale or frozen spinach to the soup and continue to stir until the soup is hot enough to serve.

(Just add berries for dessert, and you’ve got the whole GBOMB!)

Add salt and pepper and hot sauce to taste.

Two things can be true. You can be sad summer peaches are almost over and be exited for pumpkin and apple season.

Even though it’s 100% whole grain, totally vegan, low in added sugar and oil-free, this peach baked oatmeal is somehow crazy good. 🤩

I love making baked oatmeal first thing in the morning, and it bakes while I work out and get ready for the day. It makes for cheap snacks throughout the day as my kids get bowl after bowl with soy milk on top.

Whole-Food, Plant-Based, Delicious

It’s easy to make delicious food when you use ingredients like butter, white sugar, and cheese! But when you are trying to fuel your body with real, whole foods that are full of nutrition, it can get a little more tricky!

I have always been interested in nutrition and healthy eating. I haven’t had health problems, but I am passionate about fueling our bodies right. My love language is cooking delicious, healthy food for people that I know will bless their life.

I love recipes that are cheap, easy, have no empty calories, and are impressive to the eye and the tongue! That’s quite the criteria!
