Quinoa is a wonderful alternative to rice. You can just eat with a little butter, salt and pepper. Even my dog loves a little plain on his wet food!
I make a Quinoa Enchilada Casserole that is delicious!
1cup cooked quinoa
1 (10 oz) can of mild green enchilada sauce
1(4.5 oz) can of chopped green chilies
1/2 cup corn kernels, frozen caned or roasted
1/2 canned black beans, drained and rinsed
2 Tbl chopped cilantro leaves
1/2 tsp cumin
1/2 tsp chili powder
salt and pepper to taste
3/4 cup shredded cheddar cheese, divided
3/4 cup shredded mozzarella cheese, divided
1 avocado, halved seeded, peeled and diced
1 Roma tomato, dicedPreheat oven 375 degrees. Lightly oil an 8x8 or 2 quart baking. In a large bowl, combine quinoa, enchilada sauce, green chilies, corn, black beans, cilantro, cumin and chili powder. Season with salt and pepper to taste. Stir in 1/2 cup of cheddar cheese and 1/2 cup mozzarella cheese. Spread quinoa mixture into the prepared baking dish. Top with remaining cheeses. Bake until bubbly and cheeses have melted, about 15-20 minutes.
Garnish with avocado and tomato, if desired.
