Beet Boost

Beet Boost Beet Boost is a blend of beet and tart cherry juices for optimal.health. Our founder, Rick Perry, is a Portland chef and cyclist.

After coming up empty-handed in a search for a healthy energy drink alternative to the sugary and additive ones on the market, he discovered juicing—especially beets. Rick recalls, “Beet juice provided immediate and sustainable energy without the crash of a typical energy drink. And my thoughts were clear and sharp.”
Then he learned about the success athletes were having using tart cherry juice for muscle strength and joint health. In a controlled study by OHSU School of Medicine using tart cherry juice and a placebo with runners on the Oregon Hood to Coast Relay, lead author of the study, Kerry Kuehl, M.D. concluded “The bottom line is those runners who used tart cherry juice had less inflammation and faster muscle strength recovery.”
So Rick experimented by combining beet juice with tart cherry juice and discover the perfect natural energy drink. Only one problem, juicing tart cherries and beets proved to be quite a hassle, the juice wasn’t very portable and it had to be refrigerated. After lengthy research for alternatives, Rick discovered that he could have the beets and tart cherries juiced for him and “theoretically” dehydrate and filter the juices into a fine powder that would likely mix easily with water. It worked perfectly and he aptly named his first product “Beet Boost. “ It is non-GMO, vegan, gluten-free, contains no added sugar, preservatives, artificial flavors or chemicals. It’s as pure as the day is long.

Lovin' our new ambassador Christin Bummer and this Beet Boost recipe!

Holy moly, who would've thunk it?!?!

This salad came out SO good! It was inspired by Shayda Soleymani 's Bodacious Beet Salad, and added japanese sweet potatoes as inspired by a new dish Chef AJ makes. I topped it all off with a healthy serving of Cherry Beet Boost to make it just spectacular!

Here's what I did:
4 cooked beets, cubed
2 peaches, cubed,
1 c chickpeas, cooked
1 c japanese sweet potato, roasted, chilled, then air fried for 5 minutes

Dressing:
1 Tbsp Cherry Beet Boost mixed with 1/3 c water
1 Tbsp Cranberry Agretti Wine Vinegar
1/2 Tbsp Red Wine VinegarC

Combine dressing ingredients and let sit. Prepare other ingredients. Toss with Beet Boost dressing and enjoy!

What the heck would you call that? I'm usually pretty good with recipe names but I'm stumped for this one! Let me know your ideas and I just might choose to use it before I publish it!

Saffron Quinoa and Beet Salad is a hearty and tasty meal that's easy to make. Adding roasted cashews at the end adds a nice touch if you like. Scallions, peppers and other veggies or even dried fruits also add a nice touch, but be sure to not over power the saffron flavor. Here's our base recipe:

2 cups water
1 cup quinoa
10 threads of saffron, crushed (see Note)
Salt, to taste
1 cup cooked diced beets
Chopped roasted cashews (optional)

1. Combine the water, quinoa, saffron and salt in a medium saucepot and simmer partially covered until the liquid absorbs and the quinoa is releasing steam through small volcanic-like vents, about 20 minutes. Remove from the heat, cover and set aside for 10 to 15 more minutes to complete cooking.
2. Uncover the quinoa and let cool.
3. Add the beets and cashews (if using), stir and serve warm or cold.
Note: Turmeric is not a substitute for the flavor of saffron, only for the yellow color.

This Beet Bistro Burger is our latest creation made with ground flax and oats and finished with Walnut Dressing, caramelized sweet onions and heirloom tomatoes from farmer's market. The arugula and beets from our own garden. Adding Beet Boost to the patty mix turns this into one super burger!
