🧡 Yes, you can eat lasagna and still hit your health goals. This version is hearty, cheesy, comforting AND loaded with vegetables, lean protein, and all the flavour of the original.
Here’s how to make the Best Healthy Lasagna (with 40g of protein per serving!):
450g lean beef mince
1 medium onion, diced (about 80g)
1 medium carrot, chopped
200g baby marrow, chopped
150g butternut, chopped
400g canned tomatoes
300ml tomato sauce/passata
2 tsp garlic powder
2 tsp salt
1 tsp dried parsley
1 tsp dried basil
½ tsp oregano
½ tsp black pepper
8 oven-ready lasagna sheets (about 150g)
450g low-fat cottage cheese
100g shredded parmesan
150g shredded mozzarella
How to Cook:
1. Preheat oven to 190°C (375°F).
2. Cook beef mince, carrot & onion in a pan until browned (10 mins).
3. Add butternut. Cook 7 mins.
4. Stir in baby marrows, tomatoes, tomato sauce & spices. Simmer 10 mins.
5. Layer in a baking dish:
Meat sauce
4 lasagna sheets
Cottage cheese
Parmesan & mozzarella
Repeat once
6. Cover with foil & bake for 30 mins.
7. Uncover & bake another 15 mins.
8. Rest, then slice & enjoy!
🌱 Tip: Serve with a side salad for fibre and crunch.
💡 Want it lower in carbs? Swap the noodles for thin slices of grilled aubergine or courgette.
