As a woman with stretch marks on her thighs and underarms, I believed these were ugly and horrible for the longest time. But as I've gotten older, I've come to appreciate them as stripes that show I'm older, mature, and have been living a full life. They are my lines, my stripes, my marks and a part of me forever.
I applaud those who proudly embrace their stretch marks, as well as those who've taken it upon themselves to help others except their lines. We must continue to love ourselves, express body positivity,  and embrace our tiger stripes. We've earned them by being human, and that should never be a bad thing.

Ingredients

4 portobello mushrooms

8 oz goat cheese

3 cups frozen spinach

1 medium shallot , thinly sliced

2 cloves garlic , finely chopped

1 tbsp extra virgin olive oil

pinch of salt and pepper

Instructions

Preheat the oven to 400 degrees.

Remove the stems from the mushrooms, and use a spoon to scrape out the dark brown insides. Then use a damp paper towel to wipe off any excess dirt on the outside.

Place the mushrooms stem side down on a lined baking sheet. Bake for 8-10 minutes, until just slightly soft.

While the mushrooms are pre-baking, prepare the filling. Start by thawing out the spinach in a bowl in the microwave, according to package instructions. Once thawed, place the spinach in a kitchen towel and squeeze out all of the excess water. This is very important, and will help the end result to not be too watered down. 

Preheat a small skillet over medium heat, add the olive oil, shallots, and garlic. Saute for about 2 minutes, stirring frequently, until the shallots are starting to turn slightly brown. 

Transfer the shallots to a mixing bowl, add the spinach, goat cheese, and a pinch of salt and pepper. Stir with a fork to evenly combine. 

Pull the mushrooms out of the oven after they have pre-baked, let them cool for a few minutes so you can handle them. Turn them over and stuff each one with 1/4 of the spinach/goat cheese mixture. Smooth out the top and place them back in the oven. 

Bake for 6-8 minutes, until the mushrooms are soft and the goat cheese is warmed all the way through. Serve and enjoy!

Looking for a sweet treat to ignite the chemicals ( Oxytocin and Endorphins) in your body? Well give this easy recipe a try:

CHOCOLATE TRUFFLES
GLUTEN FREE
EGG FREE
VEGETARIAN

Ingredients (makes 18):

250g dark chocolate
1/3 cup greek yoghurt
3 tablespoons maple syrup
Cacao powder for rolling

Method:

1. Melt chocolate in a glass bowl sitting on top of a saucepan of boiling water.

2. Mix yoghurt and maple syrup in a bowl. Pour in melted chocolate and mix until well combined. Fold flavouring through. Pop bowl into the freezer and allow to set for 1 hour.

3. Use a spoon to scoop out balls, coat in cacao, roll between your hands, coat a second time and pop into a freezer-safe container. Repeat until all the mixture is finished. Leave in the fridge / freezer (I prefer freezer).

Storage: truffles will keep in an airtight container in the freezer for up to 4 weeks.

A healthier take on Blue Berry Bounty Bars that are 100% vegan and gluten free

Ingredients
1 cup (235ml) light coconut milk
5 tbsp maple syrup
4 tbsp coconut butter or creamed coconut
Pinch of salt
2 cups (110g) desiccated coconut
1 tbsp Arctic Power Berries blueberry powder
200g dark chocolate, melted
Method
Pour the milk into a saucepan along with the coconut butter, maple syrup and salt. Heat on low until everything is combined.
Take off the heat and fold in the desiccated coconut and blueberry powder.
Press down into a loaf tin covered with parchment paper. Freeze for 2-3 hours.
Slice into 12 bars and coat with the melted chocolate. Freeze again for 30 minutes to allow the chocolate to set.
Enjoy!
Store in the fridge for up to 3 days. Alternatively freeze and take out 15 minutes before serving.
