Quick & Easy Egg Muffins 🥚
Makes: 6–8 muffins
Prep time: 10 minutes
Bake time: 20–25 minutes
Ingredients
•6 large eggs 🥚 (high in protein, vitamin D & choline for brain health)
•1 tomato, diced 🍅 (rich in vitamin C & antioxidants)
•1 small onion, finely chopped 🧅 (flavour without sodium)
•3 small heads of broccoli, chopped finely 🥦 (packed with folate, vitamin K & fiber)
•Feta cheese, crumbled (provides calcium & protein)
•A dash of milk (adds creaminess & calcium)
•1 teaspoon all-purpose flour (helps the texture set nicely)
•Seasonings of choice
Optional add-ins: spinach, peppers, mushrooms, cooked chicken, or corn 🌽
Method
1. Preheat your oven to 180°C & lightly grease or line a muffin tray.
2. Crack an egg into a the muffin cups, whisk it with a splash of milk, flour, & your chosen seasonings.
3.In each muffin cup, layer your ingredients, for example:
🥦 broccoli at the bottom
🍅 tomato and onion in the middle
🧀 sprinkle of feta on top
4. Bake for 20–25 minutes, until puffed & golden.
5. Let them cool slightly before removing, they’ll firm up beautifully.
