🥞🍌 Fluffy Banana Cottage Cheese Pancakes

📝 Ingredients:

🍌 1 ripe banana, mashed
🧀 ½ cup cottage cheese (full-fat for extra creaminess!)
🥚 2 large eggs
🌾 ½ cup oat flour (or blend rolled oats into flour!)
🥄 ½ tsp baking powder
🧂 ¼ tsp cinnamon (optional, but delicious!)
🍯 1 tsp honey or maple syrup (optional for extra sweetness!)
🥛 2 tbsp milk (adjust for thinner batter!)
🧈 Butter or oil for cooking

👩‍🍳 Directions:

1️⃣ Mix It Up:

In a bowl, mash the banana until smooth.

Stir in cottage cheese, eggs, honey, and milk.

2️⃣ Combine Dry Ingredients:

In another bowl, whisk together oat flour, baking powder, and cinnamon.

Add dry ingredients to the wet mixture and stir until just combined.

3️⃣ Cook the Pancakes:

Heat a nonstick pan or griddle over medium heat and lightly grease with butter or oil.

Pour ¼ cup batter for each pancake.
