Honey Lime Chicken and Avocado Rice Stack
A flavorful and refreshing dish that's perfect for a summer meal.
Honey Lime Chicken and Avocado Rice Stack
For the Rice:
2 cups rice (jasmine or long-grain works best)
3 cups chicken broth
¼ cup soy sauce
1 tablespoon sesame oil
¼ teaspoon garlic powder
For the Chicken:
500g boneless, skinless chicken breasts, thinly sliced
¼ cup honey
¼ cup fresh lime juice (about 2 limes)
½ teaspoon grated fresh ginger (or ¼ tsp ground ginger)
Salt & pepper to taste
1 tablespoon olive oil (for cooking)
For the Stack (Assembly & Toppings):
1–2 ripe avocados, diced or sliced
Fresh cilantro, chopped
Lime wedges (for serving)
Optional: thinly sliced red onion, sesame seeds
Instructions:
1. Cook the Rice
In a medium saucepan:
Combine rice, chicken broth, soy sauce, sesame oil, and garlic powder.
Bring to a boil, reduce heat to low, cover, and simmer for 15–18 minutes, or until the rice is tender and liquid is absorbed.
Remove from heat and let sit (covered) for 5 minutes. Fluff with a fork.
2. Marinate the Chicken
In a bowl, whisk together honey, lime juice, and grated ginger.
Add the sliced chicken and toss to coat. Let it marinate for 15–20 minutes (or longer for deeper flavor).
3. Cook the Chicken
Heat olive oil in a skillet over medium heat.
Remove chicken from marinade (reserve a bit if you’d like to drizzle later), season with salt and pepper, and sauté until golden and cooked through, about 5–7 minutes.
4. Assemble the Stacks
Using a small bowl or food ring, layer rice at the bottom, then a layer of avocado, then top with the honey lime chicken.
Gently press each layer to hold shape, then invert the stack onto a plate (optional—you can also serve it in a bowl for a casual vibe).
5. Garnish & Serve
Sprinkle with fresh cilantro, sesame seeds, or thinly sliced red onions.
Serve with a lime wedge on the side and extra sauce.
