VEGETABLE FRITTATA MUFFINS.

This is a mix between an eggless quiche and a frittata. This was a winning combination in our family! Take a whole bunch of different grated and shredded raw veggies. (You can also just stick to one or two.) We used grated potato, carrot and onion. Then added shredded cabbage. Add you seasonings/spices/herbs. We used garlic, miso paste, smoked paprika, masala and turmeric. Then add a good amount of pink salt and a little baking powder.

Make a batter (pancake consistency) with two thirds chickpea flour (high in protein and gluten free), one third ground oat flour and water. Pour the batter over the vegetables until everything is coated but not runny. You can add nutritional yeast for that cheesy taste if you have on hand.

Spoon mixture into a sprayed muffin pan.
Bake @ 180 degrees Celsius for 20-30 minutes, until golden brown.
Cool completely before removing.
Store in a sealed container in the fridge.

Handy on-the-go snack, for lunch boxes or serve with a big salad.

Sweet & simple breakfast. Fried banana and cinnamon on sourdough toast. Slice banana, fry in a little coconut oil until both sides are golden. Sprinkle with cinnamon and serve on sourdough toast.
