Ingredients:
1 head of broccoli, chopped into small florets
1 onion, chopped
3 cloves of garlic, minced
4 cups of chicken or vegetable broth
1 cup of heavy cream
2 cups of shredded cheddar cheese
2 tablespoons of butter
Salt and pepper to taste
Equipment:
Large pot or Dutch oven
Cutting board
Chef's knife
Wooden spoon or spatula
Immersion blender or blender
Instructions:
Start by preparing the broccoli. Chop the broccoli into small florets and set them aside.
Heat a large pot or Dutch oven over medium-high heat. When it's hot, add the butter to the pot and let it melt.
Add the chopped onion and minced garlic to the pot. Sauté the vegetables until they're softened, about 5-7 minutes.
Add the chopped broccoli to the pot and stir everything together. Cook the broccoli for about 5 minutes or until it's slightly tender.
Add the chicken or vegetable broth to the pot and bring the mixture to a boil. Reduce the heat to low and let the soup simmer for about 15-20 minutes, or until the broccoli is fully tender.
Once the soup is done simmering, use an immersion blender or a blender to blend the soup until it's smooth and creamy.
Return the soup to the pot over low heat and stir in the heavy cream and shredded cheddar cheese. Continue to stir until the cheese is melted and the soup is heated through.
Taste the soup and adjust the seasoning as needed with salt and pepper.
Serve the Broccoli and Cheddar Soup hot in bowls, garnished with additional shredded cheddar cheese and chopped broccoli florets if desired.
