Peanut butter chicken inspired by .
I modified the recipe to satisfy my family's preferences.

Ingredients:
2 chicken breasts
1 onion roughly chopped
2 cloves of garlic roughly chopped
2 cups of mushrooms roughly chopped

Marinade:
3 tablespoons peanut butter
1 tablespoon cashew butter
1/4 cup of oil
1/2 cup milk
Grated ginger
3 tablespoons soya light
1/2 a lemon
1 garlic clove minced
1/8 cup of honey
1/2 cup water

Method:

1- After slicing the chicken into cubes, transfer to an airtight bag and add half of the marinade. Let it marinate for 2 hour in the fridge.

2- add 1 teaspoon of butter and saute the onions. Then add another 2 teaspoons and saute the . Let the mixture cook and caramelize before adding the chicken.

3- On the side, place the remaining peanut butter mixture in a pot and let it simmer for 1 minute (oruntil slightly thicker).

4- when the chicken cooks, add the peanut sauce and let it simmer with the chicken, onion and mushrooms for 1 minute.

Serve with rice or roasted sweet potato on the side.

for my

500 grams minced chicken
3/4 small cauliflower
3 zuchinni
2 carrots
1/2 cup oats
1/2 tsp curry
1/2 tsp Cumin
1/4 tsp mixed pepper
1 tsp dried rosemary
1 tsp dried basil
1/2 tsp garlic powder

1- Place each separately in a food processor to finely chop them (quick and efficient πŸ˜‰)

2- Mix all the ingredients together in a big bowl and form balls, fingers, or patties. All shapes work really well.

3- Cook in the oven on 180 degrees Celsius for 20 minutes.

They are to make and can be prepared in no more than 30 minutes.

Ingredients:
1 cup almond flour
1 apple
1 egg
1/2 a big banana
1/4 cup yogurt
1/2 tsp baking soda
A dash of cinnamon

Method:
1- Slice the apple and microwave it for 2 minutes.
2- Blend the apple in the food processor with all the ingredients except the almond flour.
3- Add the wet ingredients to the almond flour and mix until combined.
4- Scoop into the muffin tray and bake at 180 degrees for 15 minutes.

Ingredients:

1 cup mashed sweet potato
1cup boiled black lentils
1/3 cup boiled quinoa
5 tablespoons whole wheat flour

*Mix all the ingredients by hand (optional: add herbs and cheese).
*Bake in the oven at 180 degrees Celsius for 15-20 minutes.
*After baking, you can sprinkled some cheese on top (optional)
