I heard this saying the other day - “life is meant to be enjoyed, not endured”, and it is so true. So on that note, here’s a recipe for a yummy biscuit.
GF Pecan & Dark Chocolate Biscuits
100g Coconut Oil (softened)
140g Coconut Sugar
1 Egg
1 tsp Vanilla
2 cups Almond Flour
1/3 cup Tapioca Flour
1 tsp GF Baking Powder
1/2 tsp Salt
1/2 cup Pecans (or walnuts) halved
1/4 cup 70% Dark Chocolate Buttons (or chopped chocolate)
Preheat oven to 180c, and line 2 large baking trays.
Combine the coconut sugar and oil in a large bowl with the egg and vanilla, and whisk until combined.
In a separate bowl, combine the flours, baking powder and salt and mix until well combined.
Pour the dry ingredients into the wet ingredients and using a spatula, mix until you have a thick dough. Stir through the pecans and chocolate.
Spoon heaped tablespoons onto the trays, and lightly flatten. Ensure you leave enough space between each biscuit for spreading.
Bake in the oven for 10-15 minutes, rotating trays halfway through.
Once they are golden brown around the edges and top, transfer to a wire rack to cool. Enjoy 😊
