Entrepreneur Bernadette Eriksen is the Founder and Chief Executive Officer of Flavour Creations, a Brisbane-based $20 million food manufacturing company that researches and develops innovative dysphagia and nutrition products intended to support a healthy lifestyle and improve the lives of thousands living with dysphagia. Flavour Creations supplies to hospitals, residential aged care facilities and directly to consumers living in the community - both in Australia and internationally. What started out as an idea on Bernadette’s kitchen bench in the late 1990’s has become an international success story, after she discovered a gap in the market for providing food and drink solutions that not only taste great but offer maximum nutritional density and enhance quality of life. We love seeing the creativity our customers bring to the table.

UK customer John Howcroft recently created six incredible IDDSI Level 4 Pureed dishes, transforming everyday favourites from mains to desserts into beautifully shaped meals that truly look like the original dish.

Using Coupe and Shape It Powder, John recreated:
Pizza
Spaghetti
Ravioli
Chocolate Éclair
Pistachio Macaroon
Cheese on Toast with Parsley

The festive season is about celebrating together, and with Instant THICK, everyone can enjoy their favourite drinks safely.

For those living with dysphagia, here’s a simple way to enjoy a cold beer:
1. Pour the beer into a glass. We recommend ###X Gold for a true Queensland experience.
2. Add Instant THICK Liquid. Follow our Dosage Guide for your desired IDDSI level.
3. Stir gently for 30 seconds, then allow it to stand for 2 minutes. Re-stir until the correct consistency is reached before serving.

𝐀𝐝𝐕𝐢𝐭𝐚𝐥 𝐂𝐨𝐦𝐩𝐥𝐞𝐭𝐞 𝐍𝐮𝐭𝐫𝐢𝐭𝐢𝐨𝐧 𝐌𝐢𝐧𝐢 𝐒𝐡𝐨𝐫𝐭𝐛𝐫𝐞𝐚𝐝 𝐂𝐨𝐨𝐤𝐢𝐞𝐬
Makes 45 Cookies (10–12g each)

Ingredients
• 170g Unsalted butter
• 60g Icing sugar
• 80g AdVital Nutritionally Complete Neutral Powder
• 170g All-purpose flour

Method
1. Preheat oven to 160–170°C and line a baking tray with baking paper.
2. Cream butter and icing sugar until soft and creamy.
3. Mix in AdVital Nutritionally Complete Powder, then gradually add flour and mix until a dough forms.
4. Roll dough into 10–12g balls and flatten slightly or shape as desired.
5. (Optional) Chill for 10–15 minutes to help cookies keep their shape.
6. Bake for 8–12 minutes, until just set:
• ~10g cookies: 8-10 minutes;
• ~12g cookies: 10-12 minutes.
7. Cool on tray for 10 minutes, then transfer to a wire rack.

We were proud to support the Metro North Health Royal Brisbane & Women's Hospital National Speech Pathology Workshops from 28–30 October.

The event brought together speech pathologists from across Australia to share knowledge and advance care for people with dysphagia.

At our trade stand we showcased our full range of IDDSI-compliant dysphagia nutrition solutions, from thickeners and ready-to-drink beverages to texture-modified snacks.

We're thrilled to announce Carolyn, a devoted home carer to her late husband, as our 2025 winner for her No-melt Peach Ice Cream with Pureed Peaches 🍑 — a dish that stood out for its innovation, flavour, and heart.

She also wowed judges with dishes spanning breakfast, mains and desserts, including a standout Crème Anglaise with Pureed Peaches and a sprinkle of peach dust.

Runner-up honours go to Ian Gough, Chef Manager at Bupa Elm Grove Care Home, for his creative take on Cheese and Crackers.
