QUICK SUNDAY NIGHT FRITTATA

This easy, throw together frittata is a great option to make for the week ahead for on-the-go breakfast, lunchboxes or dinner when you can’t be buggered cooking.

Substitute with any veggies you have in the house, like: sweet potato, tinned beetroot, spring onion, potato, asparagus, and any fresh herbs. Even add ricotta or goats cheese on top before cooking.

500g pumpkin or butternut, cubed
1 red onion, sliced
2 garlic cloves, crushed
8 eggs
Oregano
Parsley
Salt and pepper
1 zucchini, sliced
2 handfuls of spinach of kale, chopped
2 tomatoes, thickly sliced

1. Pre-cook the pumpkin, onion and garlic first for 20 minutes in the dish of choice, at 180 degrees Celsius.
2. Layer over the zucchini, then kale, then tomatoes.
3. Top with whisked eggs with herbs, salt and pepper.
4. Return the dish to the oven for 30-45 minutes, until the egg has set and it’s firm when pressed in the top.
5. Allow to cool before slicing. Enjoy with some avocado, kraut, chutney, pesto or cut up on like scrambled eggs on toast.

Online Video Telehealth available in the evenings during the week, and on the occasional Saturday:
‣ Monday from 5pm, Wednesday and Thursday from 4.30pm
‣ Saturday from 9am - check online bookings for availability.

Bringing the focus to FIBRE.

Get more in your diet by increasing your daily intake of fruits, vegetables, nuts and seeds, lentils, legumes, whole-grains and whole-grain products.

Fibre is important for digestive health and regular bowel movements. It is just as important as fats, proteins and carbohydrates in our diet.

Lack of adequate (enough) fibre can lead to digestive issues like constipation, bloating, IBS and an imbalanced gut microbiome.
