Our Honey
Apple Tree Creek Honey is 100% pure and raw—untouched by heat or additives, ensuring all natural enzymes, antioxidants, and nutrients are preserved. Each jar is a reflection of the land and the seasons, harvested in small, limited batches to maintain quality, character, and freshness. Our bees forage freely in the pristine Apple Tree Creek Valley in Queensland, surrounded by native flora and free from industrial farming. Nectar is gathered from native blossoms including Apple Tree Gum, Iron Bark, Stringy Bark, and other select Eucalyptus varieties, producing a honey rich in flavour, colour, and complexity. Our Practices
• No pesticides or chemicals are used—our hives are situated far from intensive agriculture.
• Harvesting is done ethically and gently, ensuring the wellbeing of the hives.
• We are committed to natural and sustainable methods, taking only the surplus honey after abundant nectar flows.
• Honey is extracted at ambient temperature, preserving its raw integrity. Our Apiary

• A small home-based apiary with approximately 50 active and healthy hives.
• Located in Apple Tree Creek, a lush valley known for its diverse native tree species and clean environment.

Honey & Herb Australian Lamb Roast
Featuring Apple Tree Creek Honey
Ingredients:
• 1.5 to 2 kg leg of lamb, boneless or bone-in
• 3 tbsp Apple Tree Creek Honey
• 3 garlic cloves, minced
• 2 tbsp fresh rosemary, chopped (or 2 tsp dried rosemary)
• 2 tbsp fresh thyme leaves (or 2 tsp dried thyme)
• Zest and juice of 1 lemon
• 3 tbsp olive oil
• Salt and pepper to taste

Instructions:
1. Preheat oven to 180°C (350°F).
2. In a small bowl, mix honey, garlic, rosemary, thyme, lemon zest, lemon juice, olive oil, salt, and pepper to create a marinade.
3. Rub the marinade all over the leg of lamb, ensuring it’s well coated. Let it marinate for at least 1 hour, preferably overnight in the fridge for maximum flavor.
4. Place the lamb on a roasting rack in a roasting pan.
5. Roast for about 1 hour 30 minutes to 2 hours, or until the internal temperature reaches 60°C (140°F) for medium-rare, or longer for desired doneness.
6. Baste the lamb occasionally with the pan juices during roasting.
7. Remove the lamb from the oven and let it rest for 15 minutes before carving.

Serving suggestion: Serve with roasted chat potatoes, minted peas, and a fresh salad for a true Aussie feast!
