These homemade bars are proof that simple, intentional food can do a lot while being absolutely delicious! 👅
We made a batch to share with the team at Orthoplex HQ, and we can assure you they did not last long in our work fridge! 😆 See the full recipe below:
✨Ingredients✨
2 1/2 cups oats
1 cup chopped nuts, seeds and/or dried fruit of choice
(I used chia seeds, sunflower seeds, goji berries and almonds)
1 1/2 cups cottage cheese
3/4 cup honey
Vanilla extract
Pinch of sea salt
🥣 Directions 🥣
1. Combine all ingredients in a bowl and mix well
2. Press the mixture firmly into a lined baking tray so it’s nice and compact
3. Bake at 180°C fan-forced for 20–25 minutes (depending on thickness)
4. Allow to cool — they’ll continue to crisp up as they set, so avoid over-baking
5. Slice into bars and dip in melted chocolate if desired
6. Refrigerate for 5 minutes, then enjoy 🤍
