Different symptoms, same root driver:⁣⁣⁣
🚨 An immune system overloaded and lost tolerance.⁣⁣⁣

Yes, it’s chocolate cake. Yes, it’s made with zucchini. Yes, everyone loved it!⁣

Of course I’m always baking healthy treats...⁣
but for Vili’s birthday, it needed to appeal to the greater public⁣
So I made this.⁣
Chocolatey, rich, moist… and loaded with zucchini and fiber.⁣
But I didn’t tell anyone that part until after they said how much they loved it. 😉⁣

PLUS it has gut loving fiber, healthy fats and protein.⁣
✅ Refined sugar free (still has coconut sugar, but can’t win them all!)⁣
✅ Gluten free⁣
✅ Full of skin nutrients⁣
✅ Kid approved⁣
Here’s the chocolate cake recipe and cashew icing recipe:⁣


ZUCCHINI CHOCOLATE CAKE RECIPE⁣
Wet Ingredients:⁣
• 1 cup (1 medium) zucchini, shredded and squeezed⁣
• 2 eggs⁣
• ½ cup coconut sugar (I used 1/4)⁣
• ⅓ cup maple syrup (I used less)⁣
• 150ml greek yogurt⁣
• 1 tsp vanilla extract⁣
• ¼ cup coconut oil (I used olive oil)⁣
Dry Ingredients:⁣
• 1 ½ cups almond flour (packed)⁣
• ½ cup oat flour⁣
• ½ cup cacao powder⁣
• 1 tsp baking soda⁣
• ¼ tsp salt⁣
• Option: ½ cup chocolate chips (I didn’t use these)⁣
For the icing:⁣
• 3/4 cup cashews, soaked ⁣
• 2 1/2 - 3 tbsp cacao powder (adjust to your taste) ⁣
• 1/3 cup coconut cream, (use a thick brand like Ayam) ⁣
• 2 tbsp maple syrup (to taste)⁣
• 2 tsp vanilla ⁣
• pinch of salt⁣

INSTRUCTIONS⁣
• Preheat the oven (175 degrees C) and line pan with parchment paper and grease with oil .⁣
• Measure out 1 heaping cup of shredded zucchini, then place shredded zucchini in a paper towel & squeeze out the water.⁣
• Whisk together wet ingredients⁣
• Then add dry ingredients and mix together until well combined.⁣
• Pour batter into the pan. Bake for 30-40 minutes or until a tester comes out clean. Allow the cake to cool for at least 30 minutes in the pan on a wire rack before topping it.⁣

For the topping:⁣
• Soak cashews in water with sea sale for at least 45-60 minutes then drain and rinse.⁣
• Using a high speed blender, blend cashews and cacao.⁣
• Add the rest of the ingredients and blend in high until smooth⁣

One of the most common overlooked Root Causes of Eczema? ⁣
A dysregulated nervous system.⁣

🧐 A what…?⁣
This is a nervous system that's stuck in fight, flight, survival mode and has a small window of tolerance.⁣

🧐 How does this happen?⁣
Years (or decades) of:⁣
→ Chronic stress⁣
→ Emotional suppression⁣
→ Never truly resting⁣
→ Internal pressure to always “do more”⁣
(typically these are neuropathways developed and reinforced since childhood)⁣

Most eczema warriors don’t just have sensitive skin⁣

Not only does this REAL lemonade taste delicious.⁣
It’s SUPER easy to make.⁣

It ALSO…⁣

⭐️ stimulates digestions⁣

A bit about me..

My journey into the world of Nutrition and Natural Medicine stemmed from a lifetime of suffering with eczema and gut issues. I used every steroid cream and natural cream under the sun with no long-term improvement. Then a trip overseas triggered the most horrendous gut issues, triggered more food intolerances and my eczema flared to the worse it’s been.

After seeing numerous doctors and dermatologists with no resolution, I felt frustrated and alone. I started investigating natural remedies and learnt first hand the connection between food, gut health and eczema.

This plus my passion for food and helping people led me to studying a Bachelor of Health Science in Nutritional and Dietetic Medicine. During this time I started Goodness on the Go ready made meals and started working with gyms.

Through personal and clinical experience I developed the Love Your Guts, Love Your Skin. This program helps people with digestive symptoms and eczema find relief so they can feel comfortable and confident in their skin.
