Did you know placing mushrooms in the sun can actually boost your health? Here’s how:
🌟 Vitamin D
Mushrooms are one of the very few non-animal foods that can make vitamin D. When exposed to sunlight (UVB), they convert ergosterol → vitamin D₂, similar to how our skin makes vitamin D. Vitamin D helps with bone health, calcium absorption, immune function, and mood.
💪 Nutritional Upgrade (Basically Free)
Even 15–60 minutes of sun exposure can dramatically increase their vitamin D content. This is especially helpful for people who:
• Get little sun
• Are vegan/vegetarian
• Live in northern climates
🌟Vitamin D₂ from mushrooms contributes to:
•Stronger bones and teeth
•Better immune response
•Reduced risk of deficiency
🍽 Still Works After Cooking
The vitamin D formed is fairly heat-stable, so you don’t lose most of it when cooking.
What to do with mushrooms?
• Use fresh mushrooms (white, cremini, portobello all work).
• Slice them and place gill-side up for best results.
• Put them in direct sunlight for 30 minutes to a couple of hours. You can do this outdoors or on a sunny windowsill.
