Creamy coconut tofu curry!
The most popular demo dish at the moment is the Creamy Coconut Chicken Curry and I love it even after eating it many, many times.
With our resident vegetarian home for a while I thought I’d give a tofu version a go. I’ve converted other chicken dishes with success.
Things I changed:
1) I didn’t have cauliflower so I used cooked rice
2) Due to no cauliflower I skipped those steps. 3) When it came to adding chicken I added 480g firm tofu.
4) When using tofu I use the butterfly to reduce any chance of disintegration. I then changed to manual cooking mode as tofu takes less time to cook. I cooked it for about 10 minutes/90C/speed 0.5 reverse
4) Due to no chicken juices I added 120g of coconut cream instead of 90g.
Things I learned:
1) Due to swapping out chicken for tofu the onion ratio became too much, so I’d reduce the onion by at least 50g next time
2) Due to less cooking time of the tofu I would cook the onion for longer in the earlier step.
3) I would add a touch more coconut cream or water to compensate for the lack of chicken juice
But it was delicious! Give it a go for your favourite vegetarian.
